A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

2 cups flour (, plain / all purpose (Note 1))
3/4 tsp baking soda ((bi-carb soda) (Note 1))
3/4 tsp EACH salt, cinnamon and ground cloves
1/2 tsp ground nutmeg ((or 1/4 tsp freshly ground))
1 1/4 cups white sugar ((Note 2))
1 cup vegetable oil
2 eggs (, large, at room temperature (55-60g/2oz each))
1 1/2 tsp vanilla extract
2 cups apple ( , peeled, cored and cut into 8mm/ 1/3" cubes (~2 large, 3 small) (Note 3))
1/2 cup flaked raw almonds
Icing sugar . confectioners sugar, for dusting

Steps:

  • Preheat oven to 180°C/350°F (all oven types).
  • Grease and line a 21 cm / 9" springform cake pan. (Note 4)
  • Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
  • Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
  • Pour into cake pan. Sprinkle over almonds.
  • Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
  • Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. 850 g granny smith apples
30 g butter
1/3 cup raisins
2 tablespoons lemon juice
4 whole cloves
1 cinnamon stick
1/8 teaspoon nutmeg
2/3 cup sugar
1/2 cup water

1 finely grated lemon, zest of
1/4 cup self raising flour
1/4 cup cornflour (cornstarch)
sifted icing sugar, to serve

Steps:

  • Preheat oven to 350*F (180*C).
  • Peel core, and slice the apples into eights (slicing through the middle ways, so that the slices stay in rounds).
  • Melt the butter in a large frying pan, add the apples slices and cook, stirring occasionally, over high heat for 7 minutes, or until browned.
  • Add the raisins, lemon juice, cloves, cinnamon, nutmeg, half the sugar and 1/2 cup water.
  • Bring to the boil, then lower the heat and simmer for 3 minutes, or until the apples are tender.
  • Remove the cinnamon stick and cloves and spoon the apple mixture into a deep 2 litre round ovenproof casserole.
  • To make the sponge topping, beat the eggs, remaining sugar and lemon zest in a small bowl with electric beaters for 7 to 8 minutes, or until the mixture is light and creamy.
  • Sift together the flours and fold into the creamy mixture with a metal spoon.
  • Spoon the sponge topping over the apples and bake for 30 minutes, or until the sponge is well risen and golden.
  • Dust with icing sugar before serving.
  • Best eaten immediately.

200g dates , roughly chopped
200ml milk , plus a splash
250g butter , softened, plus extra for greasing
280g self-raising flour
200g light soft brown sugar
½ tsp baking powder
4 large eggs
1 tbsp mixed spice
2 tsp vanilla extract
3 small red apples
squeeze lemon juice
handful of toffees
a little icing sugar , for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line a 20 x 30cm baking tray with baking parchment. Put the dates and milk in a small pan and bring to a simmer. Remove from the heat and set aside for 15 mins to cool.
  • Whizz the date mixture to a smooth purée in a food processor or blender, then scrape into a large mixing bowl. Tip in the butter, flour, brown sugar, baking powder, eggs, mixed spice and vanilla, and set aside while you prepare the apples.
  • Quarter and core the apples, then slice quite thinly, tossing in a little lemon juice as you go. Quickly beat together the cake ingredients with an electric whisk until smooth, then scrape into the baking tray. Arrange the apple slices, overlapping in rows, on top of the cake - you should be able to get 3 rows lengthways down the tray. Bake for 45-50 mins until a skewer poked into the centre of the cake comes out clean. Cool in the tray.
  • Put the toffees in a small pan with a good splash of milk and gently melt, stirring, until runny. To finish, dust with a little icing sugar, then drizzle sauce all over the cake. Cut into squares or slices to serve.
