1/4 teaspoon ground aniseed
1/4 teaspoon ground ginger
1/4 teaspoon pumpkin pie spice
Pinch kosher salt
2 Goldrush or Pink Lady apples

Steps:

  • Preheat the oven to 225 degrees F. Line two cookie sheets with parchment.
  • In a small bowl, combine the anise, ginger, pie spice and salt.
  • Using a mandoline, slice the apples 1/8-inch thick. Arrange the apples on the prepared cookie sheets, making sure they are close but not touching. Sprinkle the apples with the spice blend. Bake for 1 hour. Flip the apples and bake until crispy, another 1 hour to 1 hour 15 minutes. Cool completely. Store in an airtight container for up to 3 days.

3 large sweet (crisp apples, such as Honeycrisp, Fuji, Jazz, or Pink Lady)
3/4 teaspoon ground cinnamon

Steps:

  • Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.
  • Wash the apples. With an apple corer, very small cookie cutter, or the round side of a metal piping tip, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds.
  • Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 1 hour in the upper and lower thirds of the oven. Remove the baking sheets and switch the pans' position on the upper and lower racks. Continue baking for 1 to 1 1/2 additional hours, until a single apple chip removed from the oven is crisp when set out at room temperature for 2 to 3 minutes (to test the apple chips, remove a single apple slice but let the others continue baking). Once you are happy with the crispness (the total time will vary based on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour as it cools down to crisp further (unless you fear you overcooked them, in which case remove the pan immediately and let it sit at room temperature).

1 teaspoon ground cinnamon
1/4 teaspoon salt
1 red Gala apple
One 6-ounce Granny Smith apple
1 1/2 cups plain 2 percent or whole milk Greek yogurt
3 tablespoons pure maple syrup
1/2 teaspoon vanilla extract
Pinch salt

Steps:

  • For the chips: Place 1 rack at the top and 1 at the bottom position and preheat the oven to 300 degrees F. Line 2 large heavy baking sheets with parchment paper. Lightly coat the parchment with nonstick spray.
  • For the topping: In a small bowl, stir the sugar, cinnamon and salt until blended.
  • For the apple chips: Stand each apple upright. Cut 1/4 inch vertically off the right and left sides of each apple. Set the mandoline or v-slicer for cutting 1/16-inch-thick slices.   • Heat the oven to 160C/ 140C fan/ gas mark 3. Core the apple and slice through the equator into very thin slices 1 - 2mm thick. Dust with cinnamon and lay flat on a baking sheet lined with parchment paper.
  • Cook for 45 mins - 1 hour, turning halfway through and removing any crisps that have turned brown. Continue cooking until the apples have dried out and are light golden. Cool, store in an airtight container and enjoy as a snack.

Spicy, Tart, and Sweet Oven Dried Apples. I like Granny Smiths but use what firm apples you prefer. I made this with candies ginger just pulse in the grinder along with the cardamom. I like the uneven amounts of spices on each slice. This way those that like it can pick the more spiced ones.

4 granny smith apples, sliced with the pampered chief apple peeler corer slicer then cut in half so you have thin slice
1/4-1/2 teaspoon cardamom seed (I just love cardamon but you can skip or cut it down to 1/4 teaspoon)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 fresh nutmeg, ground
5 teaspoons sugar

Steps:

  • Put cardamon in a coffee grinder (Used for spices not coffee. Grind till fine add rest of the sugar and spices give a couple of whirls to mix into a fine powder).
  • Lay parchment paper on 2 cookie sheet pans.
  • In a storage bag add spices and apples toss gently to coat, shaking excess spices off place on parchment in a single layer. You can sprinkle a little extra sugar on the slices this is optional.
  • Dry in a 250 degree oven 1 to 3 hours depending on how juicy the apples are. Turning after 1 hour.
  • They come out crisp,sweet and tart.
  • Store in an air tight container if for some reason there is any left over.
