1 tablespoon butter
1/4 cup packed brown sugar
1 tablespoon lemon juice
1/8 teaspoon ground cinnamon
1 cup diced peeled apple
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a saucepan, cook carrots in water until crisp-tender; drain. Add butter, brown sugar, lemon juice and cinnamon; mix well. Stir in apple. Cover and simmer for 10 minutes, stirring occasionally. 6 -8 large carrots, sliced
4 large apples, peeled, cored and sliced
5 tablespoons flour
1 -2 tablespoon brown sugar, packed (can use more for a sweeter taste)
1/2 teaspoon nutmeg
2 tablespoons butter or 2 tablespoons margarine
1/2 cup orange juice
1/2 teaspoon salt (optional)

Steps:

  • Set oven to 350 degrees.

1/2 cup brown sugar
1 tablespoon cornstarch

50ml runny honey
2 eggs
1 tsp vanilla extract
200g self-raising flour
1 tsp bicarbonate of soda

50g sultanas , raisins, chopped nuts or seeds (optional)
