GRILLED NEW YORK STRIP STEAK WITH SPICY RUB

Grilled New York Strip Steak with Spicy Rub image

This simple spicy rub is the key to making a delicious grilled steak!

Provided by RecipeGirl.com

Categories     Main Course

Time 22m

Number Of Ingredients 8

3 tablespoons paprika ((preferably Hungarian or Spanish))
1 tablespoon garlic powder
1 tablespoon chili powder
1 tablespoon dried oregano
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
½ teaspoon cayenne pepper
Four 1½-inch New York strip steaks

Steps:

  • In a small bowl, mix together the spice rub ingredients. Trim the steaks of most of the external fat. Sprinkle both sides of the steaks generously with rub.
  • Heat a gas grill. Turn one burner to high, another to medium, and another to off. (For a charcoal grill, see tips below).
  • Sear the steaks on the hottest area of the grill for 2 to 3 minutes on each side. Move to medium-hot (or an unheated area of the grill) if flare-ups occur. When the steaks are seared and grill-marked, move them to a medium-hot area and rotate to create cross-hatched grill marks. Cook for another 4 or 5 minutes, then test for doneness with an instant-read thermometer: 120 to 125°F for rare, 130 to 135°F for medium rare. Continue to grill until done to your liking.
  • Remove the steaks to a platter and cover lightly with foil. Let the steaks rest for 5 minutes or so before serving.

Categories     Beef     Garlic     Fourth of July     Backyard BBQ     Steak     Spice     Summer     Grill     Grill/Barbecue     Gourmet

Yield Makes 6 servings

Number Of Ingredients 13

3 garlic cloves
1 1/2 teaspoons kosher salt
1 1/2 teaspoons paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon black pepper
1/2 teaspoon ground cinnamon
Pinch of ground cloves
1 tablespoon olive oil
2 1/4 pounds skirt steak (2 steaks), each halved crosswise
Accompaniments: sweet-potato salad with mustard vinaigrette arugula with lemon and olive oil
Special Equipment
a charcoal grill and a bag of hardwood charcoal, or a gas grill

Steps:

  • Mince garlic and mash to a paste with kosher salt. Stir together spices in a bowl, then stir in garlic and oil until a paste forms. Pat steak dry, then rub all over with paste. Marinate steak in a sealed large plastic bag, chilled, at least 6 hours.
  • Bring steak to room temperature, about 30 minutes.
  • While steak comes to room temperature, prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is hot when you can hold your hand 5 inches above rack for 1 to 2 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderately high.
  • Grill steak on lightly oiled grill rack, uncovered, turning over once, 4 to 6 minutes total for medium-rare.
  • Cut steak diagonally across grain into 1/4-inch-thick slices. Divide sweet-potato salad among 6 plates, then top with steak and arugula.

STRIP STEAK WITH SPICE RUB

Strip Steak With Spice Rub image

From the Washington Post - another great grill recipe. "This is a homemade take on the popular Montreal steak rub. If your grill is covered in snow, you can always broil these steaks." Serve with a Caesar salad & voila! I recommend Recipe#26431 - made up the day before over a simple Romaine & crouton salad.

Categories     Steak

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

4 New York strip steaks, 1 1/2 to 2 inches thick (2 1/2 pounds total New York strip)
1 -2 teaspoon olive oil
2 teaspoons kosher salt
2 teaspoons black pepper, coarsely ground
1 teaspoon garlic powder
1 teaspoon sweet paprika
1/2 teaspoon cayenne pepper (hot paprika fine too)
1/2 teaspoon thyme, ground
1/2 teaspoon brown sugar
1/2 teaspoon orange peel, dried (optional)

Steps:

  • Let the steaks come to room temperature. Pat dry with paper towels. Rub both sides of each steak with the oil and set aside.
  • In a small bowl, combine the remaining ingredients with the orange peel, if desired, to create the spice rub. Sprinkle the rub on both sides of the steaks, pressing to adhere to the surface of the meat (some spice rub will be left over).
  • If using a gas grill, preheat to medium- to medium-high, depending on your grill. If using a charcoal grill, distribute the hot charcoal or wood briquettes evenly under the cooking area for direct heat. Oil the grate.
  • Grill for about 7 minutes per side, or until an instant-read thermometer registers 140 degrees for medium-rare. Let steaks rest, covered, for 5 minutes before serving.

Tips:

  • Choose the right steak: For this recipe, a strip steak is recommended. It is a flavorful and relatively tender cut that is perfect for grilling.
  • Use a good quality spice rub: The spice rub is what gives this steak its flavor, so it is important to use a good quality one. Experiment with different spice combinations to find one that you like.
  • Don't overcook the steak: Strip steak is a relatively thin cut of meat, so it is important to not overcook it. Otherwise, it will become tough and chewy.
  • Let the steak rest before serving: After cooking the steak, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.

Conclusion:

Spice rubbed strip steak is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a weekend barbecue. By following the tips in this article, you can ensure that your steak turns out perfectly every time.
