Steps:
- Make the salmon: Pulse the coriander and fennel seeds in a spice grinder until coarsely ground. Transfer all but 1 teaspoon of the spice mixture to a small bowl and stir in the sugar and 2 teaspoons salt (reserve the remaining 1 teaspoon spice mixture for the sauce).
- Line a rimmed baking sheet with foil. Place the salmon skin-side down on the foil. Rub the salmon with the olive oil, then sprinkle with the sugar-spice mixture. Refrigerate, uncovered, 1 hour.
- Meanwhile, make the herb sauce: Puree the parsley, chervil, chives, lemon zest and juice and the reserved 1 teaspoon spice mixture in a blender until a coarse paste forms. With the machine running, gradually add the olive oil and 1/4 cup cold water and puree until smooth. Season with salt and pepper.
- Preheat the broiler. Pat the salmon dry with paper towels. Broil the salmon until the top is browned and a thermometer inserted into the center registers 110˚, 9 to 11 minutes. Let rest 10 minutes on the pan. Transfer the salmon to a serving platter with 2 large spatulas, removing the skin. Serve with the herb sauce.

SPICE-RUBBED ROASTED SALMON WITH LEMON-GARLIC SPINACH
From Cooking Light December 2007. Don't let the mix of spices fool you, this one is a keeper. The smell and flavor is amazing. Definitely a restaurant quality dish. The spinach... I just found a new favorite way to prepare fresh cooked spinach. I hope you enjoy as much as I did! Served with garlic mashed potatoes. Note: I forgot to add the fresh cilantro; looking forward to making this again and tasting it with the cilantro garnish.

Steps:
- Preheat oven to 400°.
- To prepare salmon, combine first 6 ingredients; rub spice mixture evenly over fish. Place onion in an 11 x 7-inch baking dish coated with cooking spray. Place fish on top of onion; bake at 400° for 20 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
- To prepare spinach, heat oil in a large nonstick skillet over medium heat. Add garlic to pan; cook 1 minute. Add half of spinach; cook for 1 minute, stirring frequently. Add remaining spinach; cook 4 minutes or until wilted, stirring frequently. Sprinkle spinach mixture with rind and 1/4 teaspoon salt. Stir in juice; remove from heat.
- Place salmon on a platter. Arrange onions and spinach evenly around salmon. Sprinkle salmon with chopped fresh cilantro. Serve with lemon wedges, if desired.
Tips:
- Always use fresh salmon: Fresh salmon will have a vibrant color and a firm texture. Avoid salmon that is dull in color or has a slimy texture.
- Choose the right spice rub: The spice rub is what will give your salmon its flavor, so choose a rub that you enjoy. There are many different spice rubs available, so you can find one that suits your taste.
- Don't overcook the salmon: Salmon is a delicate fish, so it is important not to overcook it. Overcooked salmon will be dry and tough. Cook the salmon until it is just cooked through, or until it reaches an internal temperature of 145 degrees Fahrenheit.
- Serve the salmon immediately: Salmon is best served immediately after it is cooked. This will ensure that the salmon is at its best flavor and texture.
Conclusion:
Spice-rubbed salmon is a delicious and easy-to-make dish that is perfect for any occasion. It is a healthy and flavorful way to enjoy salmon, and it can be served with a variety of sides. Whether you are looking for a simple weeknight meal or a special occasion dish, spice-rubbed salmon is a great option.
