Provided by Food Network Kitchen

Categories     main-dish

Time 3h40m

Yield 8 to 10 servings

Number Of Ingredients 8

One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
1/2 cup Dijon mustard
1/2 cup whole grain mustard
1/4 cup honey
1/2 cup panko breadcrumbs
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh thyme leaves
2 tablespoons extra-virgin olive oil

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, mix the mustards and honey together in a small bowl. Mix together the breadcrumbs, parsley, thyme and olive oil together in another bowl.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush the mustard mixture all over the ham. Carefully pat the crumbs all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast until the breadcrumbs are golden brown, about 25 minutes more.

SPICY MUSTARD HAM GLAZE (NOT SWEET AT ALL)

Spicy Mustard Ham Glaze (Not Sweet at All) image

I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! Hope you enjoy!! :)

Time 8h10m

Yield 15 serving(s)

Number Of Ingredients 7

2 tablespoons spicy brown mustard
2 teaspoons Worcestershire sauce (or my original thought was liquid smoke, but then learned I didn't have any)
2 teaspoons ground cumin
2 teaspoons fresh ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons mustard powder
8 1/2 lbs bone-in ham

Steps:

  • 1. In a small bowl, wisk all ingredients together.
  • 2. Pat ham dry with papertowel.
  • 3. Schmear all over ham.
  • I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
  • I made a double batch of this to use as a dipping sauce as well. Delish!

BAKED HAM WITH MAPLE MUSTARD GLAZE

Baked Ham with Maple Mustard Glaze image

Provided by Anne Burrell

Categories     main-dish

Time 2h55m

Yield 18 to 20 servings

Number Of Ingredients 8

One 20-pound bone-in fully cooked ham
1 1/2 cups maple syrup
1 1/2 cups Dijon mustard
1/2 cup soy sauce
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
Pinch cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
  • Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
  • If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
  • Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
  • Serve hot or at room temperature.

Tips:

  • Choose the right ham: For the best results, select a fully cooked ham that is at least 10 pounds. This will ensure that the ham is large enough to feed your guests and that it has enough meat on the bone for easy carving.
  • Make sure the ham is thawed: If your ham is frozen, be sure to thaw it in the refrigerator for 3-4 days before cooking. This will allow the ham to thaw evenly and prevent it from drying out.
  • Score the ham: Scoring the ham before baking helps the glaze to penetrate the meat and creates a more flavorful crust. To score the ham, use a sharp knife to make shallow cuts in the fat, about 1 inch apart.
  • Use a flavorful glaze: The glaze is what gives the ham its delicious flavor, so be sure to choose one that you enjoy. This recipe uses a maple mustard glaze, which is a classic combination that is sure to please everyone.
  • Cook the ham slowly: The best way to cook a ham is to cook it slowly at a low temperature. This will help the ham to retain its moisture and flavor. Bake the ham at 325 degrees Fahrenheit for about 18-20 minutes per pound, or until the internal temperature reaches 140 degrees Fahrenheit.
  • Let the ham rest before carving: Once the ham is cooked, let it rest for 15-20 minutes before carving. This will allow the juices to redistribute throughout the meat, making it easier to carve and more flavorful.

Conclusion:

This spice-crusted ham with maple mustard sauce is a delicious and impressive dish that is perfect for any special occasion. The ham is cooked to perfection and the glaze is flavorful and tangy. The combination of sweet and savory flavors is sure to please everyone at your table. So next time you're looking for a special dish to serve, give this spice-crusted ham a try. You won't be disappointed!
