1 cup packed brown sugar

1-1/2 cups unsweetened applesauce
1/2 cup plus 3 tablespoons brewed coffee, room temperature, divided
2 cups all-purpose flour
1/4 cup plus 3 tablespoons baking cocoa, divided
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon ground cloves
1-1/2 cups raisins
3/4 cup chopped walnuts
1-1/3 cups confectioners' sugar

Steps:

  • In a large bowl, cream butter and brown sugar until well blended. Add eggs, one at a time, beating well after each addition. Beat in applesauce and 1/2 cup coffee. Combine the flour, 1/4 cup baking cocoa, cinnamon, baking soda, allspice, salt and cloves; gradually beat into creamed mixture until blended. 2 cups all-purpose flour

SEVEN-MINUTE FROSTING:
4 large egg whites
1-1/3 cups sugar

1/4 cup water
1/2 cup dried cranberries
1/4 cup golden raisins

Steps:

3 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
16 vanilla caramels, unwrapped
3 tablespoons plus 16 miniature semisweet chocolate chips
3/4 teaspoon shortening
1 teaspoon turbinado sugar (raw sugar) or coarse sugar
1/2 cup butter, softened
1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)
1 teaspoon vanilla
4 cups powdered sugar
1/4 cup whipping cream
1/8 teaspoon salt
Cinnamon sticks, if desired

Steps:

  • Heat oven to 325°F. Grease 3 (8-inch) round pans with shortening; lightly flour. In large bowl, beat 1 1/2 cups butter, 1 1/2 cups brown sugar and 1 cup granulated sugar with electric mixer on medium speed until well blended, scraping bowl frequently.
