SPELT PANCAKES

Spelt Pancakes image

These pancakes and fluffy, delicious, and easy to digest. Regular wheat makes my stomach hurt and, for some reason, makes me spacy and lethargic. The spelt flour is a great substitute for the highly hybridized wheat flour. Hopefully, others with similar wheat sensitivites like mine can enjoy a great pancake without having to suffer afterwards.

BLUEBERRY SPELT PANCAKES

Blueberry Spelt Pancakes image

Taken from Everything Nordic Cookbook. Blueberries grow wild in my part of the world (northern Wisconsin and the UP) just like they do in Scandinavia. Spelt, a super healthy grain, is found in a lot of Nordic recipes.

BANANA PANCAKES WITH SPELT

Banana Pancakes With Spelt image

Organic spelt flour does not change the flavor of the pancake as much as whole wheat, but offers the benefit of additional fiber. With all the processed foods being offered to my kids daily, I thought it might be helpful to get something healthy into their diet as often as possible. No complaint from the kids here!

SPELT PANCAKES

SPELT PANCAKES image

Categories     Egg

Number Of Ingredients 9

3/4 cup milk
1 tablespoon lemon juice
1 egg, beaten
1 tablespoon butter, melted
1 cup spelt flour
1 teaspoon white sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Combine milk and lemon juice in a bowl and set aside to sour, about 5 minutes. Add beaten egg and melted butter. Stir to combine.
  • Combine spelt flour, sugar, baking powder, baking soda, and salt in a large bowl. Stir gently into milk mixture until just combined. Batter will be lumpy.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 1 to 2 minutes.
  • Repeat the above with remaining batter.
  • Note: You can also use vinegar instead of lemon juice to sour the milk or use 3/4 cup of buttermilk instead. Olive oil can be used instead of melted butter for the batter.

Tips:

  • Use fresh, high-quality ingredients. This will ensure that your pancakes are flavorful and fluffy.
  • Make sure your baking powder is fresh. Old baking powder will not produce as much lift, resulting in flatter pancakes.
  • Do not overmix the batter. Overmixing will develop the gluten in the flour, resulting in tough pancakes.
  • Let the batter rest for a few minutes before cooking. This will allow the gluten to relax, resulting in more tender pancakes.
  • Cook the pancakes over medium heat. This will prevent them from burning on the outside while remaining raw on the inside.
  • Flip the pancakes only once. Flipping them too often will make them tough.
  • Serve the pancakes immediately with your favorite toppings.

Conclusion:

Spelt pancakes are a delicious and healthy breakfast option. They are made with whole grain spelt flour, which is high in fiber and nutrients. Spelt pancakes are also relatively easy to make, and they can be customized to your liking with a variety of toppings. Whether you like them classic with butter and syrup, or topped with fruit, nuts, or whipped cream, spelt pancakes are a great way to start your day.
