J-LYN'S AWESOME SALMON CASSEROLE
I improvised this salmon casserole with items I had on hand in my pantry. I've never been big on casseroles (if you've had my mom's cooking, you'd understand why), but they are definitely an easy way to use up items that would otherwise be sitting in the pantry forever. This recipe is simple enough; feel free to add or supplement as you see fit!

SALMON CASSEROLE
Canned salmon is the key ingredient in this comforting casserole sent in by Agnes Moon of Ionia, Michigan. Bread crumbs give it a soft texture...and mayonnaise, mustard and cheese add flavor to this old-fashioned favorite.

SPEEDY SALMON CASSEROLE
This is great with fresh salmon or canned salmon. This makes a creamy, casserole probably with things you have in your cabinet. It's also a great way to use up leftover mashed potatoes-or dress up instant ones. Update: I added 1/3 cup cream cheese to the potatoes, subbed roasted red pepper sauce instead of ketchup and added garlic to the sauce before adding the salmon. Recipe Source Taste of Home

Tips:
- For the best flavor, use fresh salmon fillets. If using frozen salmon, thaw it completely before cooking.
- Season the salmon fillets generously with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Use a large baking dish so that the salmon fillets have plenty of room to cook evenly.
- Bake the salmon fillets at a high temperature (400 degrees Fahrenheit) for a short period of time (12-15 minutes). This will help to keep the salmon moist and flaky.
- Serve the salmon fillets immediately with your favorite sides, such as roasted vegetables, rice, or pasta.
Conclusion:
This speedy salmon casserole is a quick and easy weeknight meal that is sure to please the whole family. The salmon is cooked to perfection and the creamy sauce is rich and flavorful. Serve this casserole with your favorite sides for a complete meal that is both delicious and nutritious.
