Time 1h35m

Yield 4 serving(s)

Number Of Ingredients 11

1 (3 -4 lb) spaghetti squash
2 tablespoons olive oil
1 tablespoon butter
8 ounces fresh mushrooms, sliced
2 medium ripe tomatoes, chopped
1 medium zucchini, cut into 1/4 inch slices
6 green onions, chopped, including tops
1 teaspoon garlic, minced
1 medium red bell pepper, cored and seeded, cut into 1/8 inch strips
1 lb fresh snow pea, trimmed
3/4 cup parmesan cheese, freshly grated

Steps:

  • Preheat oven to 350 degrees.
  • Bake whole squash 1 hour or until tender when pierced with fork.
  • Remove from oven and allow to cool 5-10 minutes.
  • Halve lengthwise and remove seeds.
  • With fork, pull out spaghetti-like strands and place in large serving bowl.
  • Set aside.
  • In large skillet, heat olive oil and butter over medium heat.
  • Add mushrooms, tomatoes, zucchini, green onions, garlic, bell pepper, and snow peas.
  • Cook until soft (4-5 minutes).
  • Pour over squash and toss to combine.
  • Sprinkle with Parmesan and serve immediately.

Tips:

  • Choose the right spaghetti squash: Look for a squash that is firm and heavy for its size, with a deep yellow color. Avoid squash that has blemishes or soft spots.
  • Cook the spaghetti squash properly: The best way to cook spaghetti squash is to roast it in the oven. This will help to caramelize the natural sugars in the squash and give it a slightly sweet flavor. You can also cook spaghetti squash in the microwave, but this method will not produce as flavorful results.
  • Use a sharp knife to shred the spaghetti squash: A sharp knife will help to create long, thin strands of spaghetti squash. If you use a dull knife, you will end up with short, thick strands that are not as appealing.
  • Season the spaghetti squash to taste: Spaghetti squash has a mild flavor, so it is important to season it well. Some common seasonings include salt, pepper, garlic powder, and Italian seasoning.
  • Serve the spaghetti squash immediately: Spaghetti squash is best served immediately after it is cooked. This will help to prevent the strands from becoming mushy.

Conclusion:

Spaghetti squash is a versatile and delicious vegetable that can be used in a variety of dishes. It is a good source of fiber, vitamins, and minerals, and it is also low in calories. If you are looking for a healthy and satisfying meal, spaghetti squash is a great option.
