Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Add 3/4 teaspoon caraway seeds and 1 minced garlic clove; cook, stirring, 1 minute. Halve 2 pounds carrots lengthwise and cut into 2-inch pieces; add to the skillet along with 1/2 cup water, 3 tablespoons each brown sugar and cider vinegar, and salt and pepper to taste. Bring to a simmer, cover and cook 15 minutes. Stir in 4 cups shredded red cabbage and season with salt; cook 5 minutes. Remove from the heat and add a squeeze of lemon juice. Transfer to a bowl and top with torn fresh dill and parsley.

I love sweet and sour red cabbage and was missing the flavor while on my current diet plan. This is a quick recipe I came up with while following Dr.Simeons HCG Protocol. This is completely "legal" on VLCD (Very Low Calorie Diet) for those following protocol. Adjust spices according to your taste preferences. **Note - I use Sweetleaf Stevia powder in the shaker - Stevia is much sweeter than sugar so sprinkle lightly and adjust to taste as with other spices. Goes great with a burger (4% Laura's is terrific) on the foreman grill.

2 tablespoons olive oil
2 tablespoons minced garlic
1 cup finely chopped onion
6 cups vegetable broth
1 cup peeled thinly sliced carrot
1 (28 ounce) can plum tomatoes in puree
1 cup tomato paste
1/2 cup tomato ketchup
1/4-1/2 cup dark brown sugar (to taste or can omit)
1 bay leaf
1/2 cup lemon juice
3 lbs cabbage, sliced into 1/4-inch-wide ribbons
1/2 cup golden raisin
sour cream (can use vegan) or Greek yogurt (can use vegan)

Steps:

  • Heat oil in a large pot over medium heat; add garlic and cook until soft.
  • Add the onion and sauté until transluscent.
  • Add 3 c vegetable broth, carrots, tomatoes and purée, tomato paste, ketchup, sugar and the bay leaf.
  • Bring to a boil then reduce to a simmer and cook for 10 minutes.
  • Crush the whole tomatoes and continue to simmer until carrots are tender (10 more minutes).
  • Discard bay leaf and, using an immersion blender, blend until slightly chunky (this step is not necessary, texture is good).
  • Add lemon juice and cabbage and remaining 3 cups vegetable broth (there will be a LOT of cabbage, but it will cook down).
  • Again, bring to a boil, then reduce heat and simmer until the cabbage is done however you like it (1 hour for al dente,2 hours for soft, or anywhere in between).
  • Add 3-6 cups water, until the soup reaches your desired consistency.
  • Add the raisins 10 minutes before serving.
  • Season with salt and pepper.
  • Serve with sour cream.

This recipe is so old it could be considered "antique." It was my Grandmother's recipe. When I prepared it, I was an adult but it definitely rang childhood memory bells. My Grandmother wrote out this recipe as I am reproducing it and on the recipe she noted that this dish is good with roast pork or pork chops, dumplings and applesauce. An excellent meal from Central Europe! (Bread dumplings are now available in the freezer section of the supermarket.)

1 onion, larger than a walnut, chopped
1 tablespoon shortening (or oleo)
1 1/2 cups water
1/2 cup vinegar
1/2 cup sugar
