Yield 8

Number Of Ingredients 13

7 pounds crown pork roast
2 cups chopped cranberries
½ cup white sugar
½ cup butter
2 onions, chopped
2 cups chopped celery
2 teaspoons salt
¼ teaspoon ground black pepper
8 cups white bread cubes
2 apples - peeled, cored, and chopped
½ cup apple juice
1 egg
1 teaspoon poultry seasoning

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Season pork roast with salt and pepper to taste, then place on a rack in an open roasting pan, rib ends down.
  • Bake at 375 degrees F (190 degrees C) for 2 hours. Roast will be only partially cooked.
  • Meanwhile, in a medium bowl, combine cranberries and sugar and mix well; set aside. Melt butter or margarine in a large skillet over medium heat. Add onions and celery and saute until tender, about 10 minutes. Add cranberry mixture, 2 teaspoons salt, 1/4 teaspoon ground black pepper, bread cubes, apples, apple juice, egg and poultry seasoning. Toss well.
  • After the two hours, remove roast from oven. Turn rib ends up and fill cavity with cranberry/apple stuffing. Insert meat thermometer between two ribs in the thickest part of the meat, making sure that end of thermometer does not touch any bone.
  • Return stuffed roast to oven and continue roasting at 375 degrees F (190 degrees C) for about 1 1/2 hours, or until internal temperature of meat reaches 175 degrees F (80 degrees C). (Note: If stuffing becomes too brown, cover it with aluminum foil.)
  • To Serve: Place roast on warm platter and let stand for 15 minutes for easier carving. Slice between ribs to carve, and serve with stuffing.

Yield Makes 4 to 6 servings

Number Of Ingredients 14

1 12-ounce unpeeled russet potato, well scrubbed, cut into 1-inch cubes
1 12-ounce yam (red-skinned sweet potato), peeled, cut into 1 1/2-inch cubes
2 large carrots, peeled, halved lengthwise, cut crosswise into 1 1/2-inch pieces
3 medium parsnips, peeled, cut into 1 1/2-inch pieces

8 cups coarsely torn red or green mustard greens
1 shallot, minced
1/2 cup dry white wine
1/4 cup water

Steps:

  • Toss first 5 ingredients in large roasting pan. Mix butter, sage, and garlic in small bowl. Place chicken in center of vegetables. Using fingertips, loosen skin from breast. A Very Special Pot Roast for the Crock Pot image

Spices and mixed dried fruit make a great flavor for this roast--it's a family favorite. (Don't confuse the dried fruit bits you buy for baking--look for packages of regular size dried apples, peaches, pears and plums).

SPECIAL ROAST

Special Roast image

This recipe was given to me by "Mo", a camp cook up in Canada. She was my savior. My son-in-law talked me into being a camp cook and said that it was so easy to do. "Just go to the store" The first words out of her mouth was can you make bread? pies? of course I didn't. So she stayed around for the next day and gave me a crash...

MAKE A PASTE:
1 or 2 Tbsp garlic powder
1 pkg (envelope) lipton onion soup mix
1 or 2 Tbsp beef oxo (bullion granules)
1 Tbsp worcestershire sauce
ketchup
pepper (no salt as the soup mix has quite a bit))
BEEF ROAST: RUMP
i use this for a large moose roast.

Steps:

  • 1. In a coffee cup, add the rest of the ingredients for the paste. Add ketchup a little at a time and stir, to make a thick paste. You can add more of the other ingredients, as nothing is measured out..just a little of this and that. Trim fat off as needed.
  • 2. Place roast in roaster and add a little water (about 1" to bottom of pan) Put the paste on the top of the roast and cover as much as possible. this will seal the meat and make it tender. Cover and bake for 3 hours. I have made gravy out of the drippings in the bottom of the pan after the roast has cooked, but the flavor of the seasoning it was a little to strong for my taste. Also, if your roast is smaller, just cut the ingredients in 1/2. I have also used the crock pot and this has worked out well. I added potatoes and carrots for the last hour of cooking.
  • 3. This works very well with a wild game roast.

Tips and Conclusion

Tips:

  • Choose the right cut of beef. For a special roast, look for a cut that is well-marbled with fat, such as a prime rib, rib eye, or tenderloin. These cuts will cook evenly and stay moist and tender.
  • Season the roast well. Use a generous amount of salt and pepper, as well as your favorite herbs and spices. This will help to develop flavor in the roast.
  • Cook the roast to the desired doneness. A rare roast will be cooked to an internal temperature of 125 degrees Fahrenheit, a medium-rare roast will be cooked to 135 degrees Fahrenheit, a medium roast will be cooked to 145 degrees Fahrenheit, and a well-done roast will be cooked to 160 degrees Fahrenheit.
  • Let the roast rest before carving. This will allow the juices to redistribute, resulting in a more tender and flavorful roast.
  • Serve the roast with your favorite sides. Some popular sides for roast beef include Yorkshire pudding, mashed potatoes, and green beans.

Conclusion:

A special roast is a perfect way to celebrate a special occasion or to simply enjoy a delicious meal with family and friends. By following these tips, you can prepare a roast that is tender, flavorful, and sure to please everyone at the table.
