1/2 cup warm water (110° to 115°)
1/2 cup half-and-half cream
1/4 cup sugar
1/4 cup shortening
1 large egg, room temperature
1 teaspoon salt
1/2 teaspoon ground nutmeg
3 to 3-1/2 cups all-purpose flour
Oil for deep-fat frying
MAPLE FROSTING:
1/4 cup packed brown sugar
2 tablespoons butter
1 tablespoon half-and-half cream
1/8 teaspoon maple flavoring
1/2 cup confectioners' sugar
CHOCOLATE FROSTING:
2 ounces semisweet chocolate, chopped
2 tablespoons butter
1/2 cup confectioners' sugar
2 tablespoons boiling water
1 teaspoon vanilla extract

2 Tablespoons warm water (105-115°F)
3 1/4 Cups all-purpose flour plus some for working the dough
1 Cup milk, room temperature
1/2 stick (1/4 cup) unsalted butter, softened
3 large egg yolks
2 Tablespoons sugar
1 1/2 Teaspoons salt
1/2 Teaspoon cinnamon
Canola or other neutral oil for frying
Chocolate Glaze: (Enough for 12 long johns)
1/4 Cup unsalted butter
2 Tablespoons milk
1 Teaspoon light corn syrup
1 Teaspoon vanilla extract
3 ounces bittersweet chocolate
1-2 Cups confectioner's sugar (powdered sugar)

1 quart oil for frying, or as needed
