SPECIAL LOBSTER BISQUE

This is the recipe passed on to me from my Aunt Doris (who in turn had it passed on to her). Seafood is local favorite on the East End of LI due to its fishing community. Fresh seafood is best.

3 Tbsp minced onion
3 c cooked minced lobster meat, shredded

Tips:

  • Use fresh lobster shells. Fresh lobster shells will give your bisque the best flavor. If you don't have access to fresh lobster shells, you can use frozen lobster shells. However, fresh shells will give you a much better flavor.
  • Roast the lobster shells before making the bisque. Roasting the lobster shells will help to bring out their flavor. To roast the shells, simply place them on a baking sheet and roast them in a preheated oven at 400 degrees Fahrenheit for 10-12 minutes, or until they are browned.
  • Use a good quality white wine. The white wine that you use in your bisque will have a big impact on the flavor of the final dish. Choose a white wine that is dry and has a good acidity. A Sauvignon Blanc or a Chardonnay would be a good choice.
  • Don't overcook the bisque. Lobster bisque is a delicate soup, and it can easily be overcooked. Overcooked bisque will be tough and chewy. Cook the bisque until it is just heated through, about 5-7 minutes.
  • Serve the bisque immediately. Lobster bisque is best served immediately after it is made. The soup will start to lose its flavor if it sits for too long.
