18 oz. Special K Serial (crushed into meal-like consistency )
1 T Olive Oil
1 Medium Onion (finely chopped)
4 cups Mushrooms (finely chopped)
¼ cup Soy Sauce
1½ t Garlic Powder
1½ t Onion Powder
1 T Chicken like Seasoning ((vegan))
2 T Nutritional Yeast
2 16 oz blocks Firm Tofu (pressed 30 minutes then crumbled)
½ cup Walnuts (finely chopped)
2 Flax Eggs (2 T Ground Flax, 8 T water mix well and let sit for 15 minutes)
1 can Coconut Milk

Steps:

  • Press your two blocks of tofu for 30 minutes.
  • Crush your special k cereal up in the bag or in food processor until it is a meal-like consistency, then add softened refined coconut oil and use a mixing spoon or spatula.
  • In a medium frying pan add 1 T olive oil, onions and mushrooms, saute until onions are translucent. When done, place onions and mushrooms in a medium sized mixing bowl.
  • Crumble the tofu into the same bowl as the onions and mushrooms and set aside.
  • In a small mixing bowl stir well together soy sauce, olive oil, garlic powder, onion powder, chicken like seasoning, nutritional yeast. Pour mixture over top of crumbled tofu and mushrooms.
  • Mix together well.
  • Add walnuts, tofu mix and flax eggs to the special k meal and mix well.
  • Add coconut milk, mix well then dish into baking pan.
  • Bake uncovered at 350F for 60 minutes. Let rest for 10-15 minutes then enjoy!

4 eggs, well beaten
2 cups cottage cheese
3 teaspoons natures seasoning

  • Saute onions in butter or margarine until wilted and clear.

2 ¼ cups bread flour, plus more for dusting
1 ¼ cups whole wheat flour
1 ¼ cups toasted pecans
1 cup semi-sweet chocolate chips
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon freshly grated nutmeg
¼ teaspoon ground cloves
1 teaspoon kosher salt
1 cup warm water
2 ¼ teaspoons instant yeast
1 cup unsweetened pumpkin puree
¼ cup maple syrup

Steps:

  • In a large bowl, combine the bread flour, whole wheat flour, pecans, chocolate chips, cinnamon, ginger, nutmeg, cloves, and salt. Stir well with a rubber spatula.
  • In a separate large bowl, whisk together the warm water, yeast, pumpkin purée, and maple syrup.

1 teaspoon baking powder
3/4 cup butter
6 tablespoons sugar

Steps:
