1 (1 ounce) square unsweetened chocolate
2 cups shortening for frying
1 cup garbanzo beans, drained and pureed
1 cup white sugar
1 teaspoon ground cinnamon
¼ cup pureed dates
¾ cup ground walnuts
3 eggs
¼ cup melted shortening
2 ½ cups all-purpose flour
¼ cup white sugar
¼ teaspoon salt
⅓ cup confectioners' sugar for dusting

Steps:

  • Melt semisweet chocolate and unsweetened chocolate in the top of a double boiler or in a bowl in the microwave. Stir until smooth. Set aside to cool. Heat the 2 cups shortening in a large, heavy skillet or deep fryer.

SPECIAL-K COOKIES

Special-K Cookies image

My dad made these the first time for me back around 1973 when I was about 12 years old. I have been addicted to them ever since ! If you like peanut butter, you will love these !

Provided by Lorrie Wyble

Categories     Cookies

Time 30m

Number Of Ingredients 7

1 tsp vanilla extract
1 c all purpose flour
1 Tbsp margarine
1 c karo light syrup
2 c peanut butter
1/2 c marshmallow cream
4 c special-k cereal

Steps:

  • 1. Make sure your kitchen table is cleared off. Pull and cut a long strip, or 2, of wax paper, and lay it out on table.
  • 2. Use a double-boiler type system where you have 2 deep pots of equal size, so you can stack one on top of the other. Fill bottom pot half-full of water, and bring to a medium boil (you will probably need to adjust temperature according to type of stove used). Stack empty pot on top of it.
  • 3. Put the peanut butter, margerine, and marshmallow cream into top pot.
  • 4. As soon as the ingredients start to melt, start stirring them together until they are well blended, smooth and creamy.
  • 5. Gradually stir in flour until well blended.
  • 6. Add Karo Syrup, and vanilla until well blended.
  • 7. Boil for 15 minutes. Reduce heat to low/simmer.
  • 8. Gradually add cereal until well blended. Turn off stove.
  • 9. Carefully remove HOT water pot, and set in sink. Run cold water into HOT water until water is cool enough to pour out.
  • 10. Quickly spoon cookie mixture onto wax paper in size of cookies desired. Let cool for 1 hour. Enjoy !

SPECIAL K PEANUT BUTTER COOKIES RECIPE - (4.1/5)

Special K Peanut Butter Cookies Recipe - (4.1/5) image

Provided by jasonhewitt

Number Of Ingredients 6

1 C White Sugar
1 C White Corn Syrup
1 tsp Vanilla
1 pinch of Salt
1 1/3 C Peanut Butter
5 C Special K Cereal

Steps:

  • Have everything pre-measured and ready to go...this can set up fast. Over medium heat, stir sugar, corn syrup, vanilla and salt until boiling and sugar has melted. Stir in Peanut Butter. Stir in Cereal. Drop cookie size onto wax paper and let harden. Makes about 2-3 dozen depending on size.

Tips:

  • Use parchment paper: It makes cleanup easier and prevents cookies from sticking to the pan.
  • Chill the dough before baking: This helps the cookies hold their shape and prevents them from spreading too much.
  • Bake the cookies at the right temperature: Cookies should be baked at a temperature between 350°F and 375°F. If the oven is too hot, the cookies will brown too quickly and the inside will be undercooked. If the oven is too cool, the cookies will take too long to bake and will be dry and crumbly.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Let the cookies cool before eating: Cookies need to cool for at least 10 minutes before they are eaten. This gives them a chance to set and firm up.

Conclusion:

With a little planning and effort, anyone can make delicious cookies at home. By following the tips in this article, you can ensure that your cookies turn out perfect every time. So next time you have a craving for something sweet, try one of these special cookie recipes. You won't be disappointed!
