2 envelopes unflavored gelatin
1-1/2 cups white grape juice, divided
1-1/2 cups sweet white wine or additional white grape juice
1/4 cup sugar
1 can (15 ounces) mandarin oranges, drained
1 cup green grapes, halved
3/4 cup fresh raspberries

Steps:

  • In a small saucepan, sprinkle gelatin over 1/2 cup juice; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir in the wine, sugar and remaining juice. Cook and stir until sugar is dissolved., Pour into a 1-1/2-qt. serving bowl. Refrigerate until set but not firm, about 1 hour. Fold in the oranges, grapes and raspberries. Refrigerate until firm.

1 box (4-serving size) raspberry-flavored gelatin
1 cup boiling water
1 cup cold water
16 fresh raspberries
1 cup whipping cream
4 oz white chocolate baking bars or squares, finely chopped
3 tablespoons sugar
2 teaspoons unflavored gelatin
1/2 cup milk
2 cups champagne or sparkling wine
3 tablespoons sugar
1 envelope unflavored gelatin

Steps:

  • In medium bowl, place raspberry gelatin. Pour boiling water over gelatin and stir until dissolved. Add cold water; stir until well combined. Cool slightly. Place 4 raspberries in each of 4 champagne glasses; fill each glass about one-third full with raspberry gelatin. Refrigerate until set, about 1 hour.
  • In small saucepan, heat whipping cream, white chocolate and 3 tablespoons sugar over medium heat until chocolate is melted. Remove from heat; cool. In small bowl, sprinkle 2 teaspoons unflavored gelatin over milk; stir until gelatin is dissolved. Pour milk mixture over cooled white chocolate mixture; stir until blended. 2 envelopes knox unflavored gelatin
2 c cranberry - raspberry juice
1/3 c sugar
1 c club soda
1 tsp lemon juice
1 tsp fresh grated orange peel (optional)
3 c assorted blueberries, raspberries, strawberries

Steps:

  • 1. In medium saucepan, sprinkle unflavored gelatin over 1 cup cranberry - raspberry juice; let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Stir in sugar till dissolved.
  • 2. In a large bowl, blend remaining cran - rasp juice. soda, lemon juice and orange peel. Chill, stirring occasionally, until mixture is consistency of unbeaten egg whites, about 60 minutes.
  • 3. Fold in berries. Pour into 6 - cup mold, or bowl; chill until firm, about 3 hours.
  • 4. Unmold and serve; if desired with sour cream Substitution: Use 2 cups cranberry juice cocktail, and increase sugar by 1/2 cup.
  • 5. This recipe also called for 1/4 cup creme de cassis ( black currant) liquer ( optional)..I never used it. It is added when you add the soda, etc I have also made this with just cranberry juice..yum!

2 cups cranberry juice cocktail (or cran-raspberry is good)
1 (6 ounce) package red Jell-O (black cherry or raspberry is what I love)
1 1/2 cups club soda
1/4 cup creme de cassis (I've never used but someday....) (optional)
1 teaspoon fresh lemon juice
3 cups raspberries or 3 cups sliced strawberries

Steps:

  • Stir boiling cranberry juice (heat in pan) into gelatin in large bowl at least 2 minutes (until well dissolved).
  • Stir in club soda, liqueur, and lemon juice.
  • Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites-I set my bowl inside a larger bowl of ice water and it takes about 20 minutes).
  • Stir in 2 cups of the berries.
  • Spoon into 5-cup mold.
  • Refrigerate about 4 hours or until firm.
  • Unmold and top with remaining 1 cup of berries in center.
