2 cups fresh cranberries
1 cup good maple syrup (preferably Grade B)
1 cup granulated sugar
1 box water crackers (such as Carr's)
8 ounces Brie cheese
1/2 cup cranberry chutney or relish (homemade or purchased - I use Stonewall Kitchen)
Fresh mint, for garnishing

Steps:

  • 1. Rinse cranberries and place in a medium bowl. Heat the maple syrup in a small saucepan until just warm. Pour over cranberries. (Make sure the syrup is just warm, not hot, or the cranberries may pop). Gently stir with a spoon to coat. Cover, and let soak in the refrigerator overnight. 2. The next day drain the cranberries in a colander (do not rinse). Place the sugar in a large bowl or baking dish. Add half the cranberries and roll them around until they're lightly coated in sugar. Repeat with the other half. Place on a baking sheet and let dry, about 1 hour. 3. To assemble, top the crackers with one slice of brie, a light layer of cranberry chutney, and about 3 cranberries. Garnish with fresh mint sprigs.

¼ cup water
½ cup cranberries
1 French baguette
1 tablespoon extra virgin olive oil
7 ounces Brie cheese
2 tablespoons honey
⅛ cup chopped fresh mint
1 teaspoon rosemary salt

Steps:

  • Combine ½ cup of granulated sugar with ¼ cup of water in a saucepan and heat over medium-high for 4 minutes, stirring until the sugar dissolves and a syrup forms.
  • Add the cranberries to the sugar syrup and mix until they're evenly coated.
