2 tablespoons extra-virgin olive oil
1/2 onion, chopped (3/4 cup)
1 large potato, peeled, cooked, and cut into 1/2-inch cubes
1 1/2 teaspoons coarse salt
8 large eggs, beaten

  • Heat a 10-inch cast-iron or nonstick ovenproof skillet over medium heat. Swirl in the olive oil. Add the onion and saute until translucent, about 3 minutes. Add the potato and 3/4 teaspoon of the salt. Continue to cook and occasionally stir until the onion and potato are slightly browned, 5 to 6 more minutes.

When the eggs are set on the side but the top is still loose, place the pan under the broiler for 2 minutes. The frittata will turn slightly golden and puff up before it settles. Cut into wedges to serve. Wrap a wedge in a piece of parchment paper to give someone a portable breakfast bite.

Number Of Ingredients 8

3 to 4 medium potatoes
1 large onion
4 tablespoons vegetable oil (or olive oil; divided)
Salt (to taste)
Black pepper (to taste)
8 eggs
1/3 cup cream (or whole milk)
Optional: chopped cilantro or parsley

Steps:

  • Gather the ingredients.
  • Peel the potatoes and slice thinly (about 1/4 inch thick) using a mandoline or a very sharp knife, or cut them into 1/2-inch cubes.
  • Place the cut potatoes into a bowl and cover them with salted water. Soak for about 15 minutes.
  • Slice the onion thinly.
  • In a large, deep, nonstick, ovenproof skillet, heat 2 tablespoons of the oil over medium heat. Add the sliced onion and cook until the onion is soft, fragrant, and turning golden.
  • Drain the potatoes and pat them dry.
  • In a large bowl, toss the potatoes with the remaining 2 tablespoons of oil and season with salt and pepper. Reserve the bowl.
  • Add the potatoes to the onion in the skillet.
  • Cover and cook the potatoes over low heat until tender, stirring occasionally to keep them from sticking to the pan and burning.
  • In the reserved large bowl, whisk together the eggs and cream, seasoning with salt and pepper.
  • Pour the cream and egg mixture over the potatoes and onion in the skillet. Sprinkle chopped parsley or cilantro over the eggs and potatoes, if using.
  • Cook the mixture over low heat until the eggs seem mostly set, being careful not to burn them, about 5 to 8 minutes.
  • Carefully flip the frittata by turning a plate upside down over the skillet.
  • Turn the skillet over so the frittata falls onto the now right-side-up plate.
  • Slide the frittata from the plate back into the skillet so the browned side is facing up and cook over low heat for a few more minutes.
  • Cut the tortilla into wedges to serve.

Tips:

  • Choose the Right Potatoes: For the best texture and flavor, use a combination of starchy and waxy potatoes. Starchy potatoes, like Russet potatoes, will break down and create a creamy texture, while waxy potatoes, like Yukon Gold potatoes, will hold their shape and provide a bit of chewiness.
  • Slice the Potatoes Thinly: This will help them cook evenly and quickly. You can use a mandoline slicer or a sharp knife to slice the potatoes thinly.
  • Don't Overcrowd the Pan: When cooking the potatoes, make sure not to overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to stick to the pan.
  • Cook the Potatoes Until Golden Brown: Cook the potatoes until they are golden brown on both sides. This will give them a nice crispy texture and will help to develop their flavor.
  • Use Good Quality Olive Oil: Olive oil is an important ingredient in Spanish cuisine. Make sure to use a good quality olive oil for the best flavor.
  • Don't Flip the Frittata Too Often: When cooking the frittata, don't flip it too often. This will prevent it from breaking up and will help it to cook evenly.
  • Let the Frittata Cool Slightly Before Serving: Once the frittata is cooked, let it cool slightly before serving. This will help it to hold its shape and will make it easier to slice.

Conclusion:

This Spanish-style potato and onion frittata is a delicious and versatile dish that can be served for breakfast, lunch, or dinner. It's easy to make and can be customized with your favorite ingredients. So next time you're looking for a quick and easy meal, give this frittata a try!
