4 c. cooked rice
2 lb. ground beef
2 8-oz. cans tomato sauce
1 Tbsp. garlic powder
Salt & pepper to taste
1 8-oz. package sharp cheddar cheese

Steps:

  • Cook four cups of rice in rice cooker and allow to cool for 10 minutes. Brown ground beef and drain oil. Add tomato sauce and garlic powder and mix well. Add cooked rice a little at a time and fold into hamburger mixture until rice is completely coated in tomato sauce. Taste the rice mixture and add salt, pepper and garlic powder to your taste. Poke holes in rice mixture and pour cheddar cheese over rice ensuring that some of the cheese fills the holes. Cover for 10 minutes allowing cheese to completely melt.

2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes.
