EASY AUTHENTIC SPANISH RICE
My family loves a variety of ethnic foods, but this is one of their favorites. My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

Tips:
- Choose the right rice: Long-grain rice, such as basmati or jasmine rice, is best for Spanish rice. These rices will cook up light and fluffy, and they won't stick together.
- Use flavorful ingredients: The key to making delicious Spanish rice is using flavorful ingredients. This includes using a good quality olive oil, fresh vegetables, and a flavorful broth. You can also add spices, such as cumin, chili powder, and paprika, to give the rice a boost of flavor.
- Cook the rice properly: Spanish rice is typically cooked in a pot on the stovetop. Be sure to follow the recipe instructions carefully, and don't overcook the rice. Overcooked rice will be mushy and bland.
- Let the rice rest: Once the rice is cooked, let it rest for a few minutes before serving. This will allow the rice to absorb all of the flavors and become even more delicious.
Conclusion:
Spanish rice is a delicious and versatile dish that can be served as a side dish or as a main course. It's also a great way to use up leftover rice. With its simple ingredients and easy-to-follow instructions, Spanish rice is a great recipe for both beginner and experienced cooks. So next time you're looking for a quick and easy meal, give Spanish rice a try!
