HEARTY SPANISH RICE BAKE
Ground beef, fresh onion, green bell pepper, garlic, tomatoes, and rice are simmered in a sweet-hot sauce then baked with Cheddar cheese and garnished with fresh cilantro. Spice it up with Ro-Tel® instead of regular canned tomatoes, cayenne, and jalapeno peppers. I have also added extra Cheddar cheese and you can substitute a Mexican blend or any other cheese if you like. Warning: this will spice up your life if you use the optional ingredients.

SPANISH CHICKEN & RICE BAKE
A throw-it-together and pop it in the oven supper. Use more chili powder or add hot sauce if you really want to spice it up! I just want to add: Many people who have tried this recipe have had to cook it longer than I have specified. A hint: I always use a casserole dish with a heavy tight-fitting lid. I sometimes presoak my rice in cold water for 10 minutes or so. Hope this helps! =) Barb PS...To Freeze : Cool, portion and freeze in a ziploc bag. To reheat: Thaw, place in a covered casserole dish and bake until heated through.

SPANISH RICE BAKE
This meatless casserole can be served with your favorite toppings such as sour cream, chopped avocado, or guacamole. If you would like to add meat, ground beef, diced pepperoni, crumbled bacon or cooked sausage could be added. A 3 quart casserole would be needed. As a side dish, this rice bake could be served with grilled chicken or steak fajita's or tacos. A very versatile recipe that your family will enjoy. My favorite cookbooklet containing casserole and slow cooker meals is where I found this recipe.

Tips:
- Use high-quality ingredients for the best flavor. Choose long-grain rice, such as basmati or jasmine, for a light and fluffy texture.
- Be sure to rinse the rice before cooking to remove any starch and prevent clumping.
- Use a heavy-bottomed pot or Dutch oven to cook the rice evenly.
- Bring the water or broth to a boil before adding the rice. This will help to prevent the rice from sticking to the bottom of the pot.
- Cover the pot and reduce the heat to low. Simmer the rice for the recommended amount of time, or until all of the liquid has been absorbed.
- Once the rice is cooked, let it rest for a few minutes before fluffing it with a fork.
- Spanish rice is a versatile dish that can be served as a side dish, main course, or even a breakfast casserole. It can be customized to your liking by adding different vegetables, proteins, and spices.
Conclusion:
Spanish rice is a delicious and easy-to-make dish that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy dinner idea, give Spanish rice a try.
