SPANISH OVEN BAKED ROAST CHICKEN

JUICY ROASTED CHICKEN
My grandmother's recipe for roasted chicken. We are German and she used to do it this way all the time. I never have had a chicken this juicy before; this little trick works and makes the people eating it go silent. It's funny. We nibble on the celery after.

Tips:
- Choose the Right Chicken: Opt for a whole chicken weighing around 3-4 pounds (1.5-2 kg). Ensure it's fresh and free of any bruises or tears in the skin.
- Prep the Chicken: Remove any giblets from the chicken cavity and pat it dry with paper towels. This helps the chicken cook evenly and prevents splattering during roasting.
- Season Generously: Use a flavorful combination of salt, pepper, garlic powder, paprika, and dried oregano to season the chicken inside and out. You can also add a dollop of butter or olive oil under the skin for extra moisture.
- Roast at High Heat Initially: Start by roasting the chicken at 400°F (200°C) for 30 minutes. This creates a crispy skin and helps seal in the juices.
- Reduce Heat for Even Cooking: After 30 minutes, reduce the oven temperature to 350°F (175°C) and continue roasting for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
- Let the Chicken Rest: Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a tender and succulent chicken.
- Serve with Desired Sides: Accompany the roasted chicken with roasted vegetables, mashed potatoes, or a salad for a complete and satisfying meal.
