SPANAKOPITA MASHED POTATOES

I learned to cook by watching my mom in the kitchen. Most of the recipes I make use only five or six ingredients, and have a healthier bent. I created this recipe after I tried a spinach-topped baked potato. Flecks of red and green from the potato skin and spinach make these potatoes look festive and special. By leaving the potatoes unpeeled, you not only keep some nutrients, you also save on prep time.-Ashley Levy, Columbia, Maryland

Tips:

  • For the best results, use high-quality ingredients. Fresh spinach, creamy mashed potatoes, and flavorful cheese will make a big difference in the final dish.
  • If you don't have phyllo dough, you can use puff pastry instead. Just be sure to roll it out thinly so that it's easy to work with.
  • When assembling the spanakopita, be sure to brush each layer of phyllo dough with melted butter or olive oil. This will help the layers to stick together and create a crispy crust.
  • Bake the spanakopita until it's golden brown and the filling is hot and bubbly. This will usually take about 30 minutes.
  • Let the spanakopita cool for a few minutes before slicing and serving. This will help the filling to set and make it easier to cut.
