2 can(s) Spam, chopped or grated (12 oz each)
4-6 hard boiled eggs
3 celery stalks, chopped
3 carrots, grated
1/4 c onion
1/4 c dill relish
1/2 c grated cheese of your choice (i like sharp)
1 c mayonnaise, or more if you like.
salt & pepper to taste

2 onion slices
2 slices sourdough bread
1 tablespoon unsalted butter

  • In a saute pan, heat oil and saute onions until caramelized, 5 to 10 minutes.
  • Toast bread, either on the grill top or toaster.

1 (12 ounce) container Spam™ sliced into 1/4 inch thick slices
10 slices Cheddar cheese
10 thin pineapple slices

  • Spread a thin layer of salad dressing on one side of each slice of bread. Place two slices of Spam side by side on 5 of the slices of bread. They should cover the slices perfectly. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled

2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
