2 tablespoons olive oil
2 onion slices
2 slices sourdough bread
1 tablespoon unsalted butter
3 slices SPAM (about 1/4-inch thick)
Mayonnaise or mustard, for serving
5 or 6 pickle slices
Lettuce, tomato or pickled jalapenos, optional
Serving suggestion: fries

Steps:

  • In a saute pan, heat oil and saute onions until caramelized, 5 to 10 minutes.
  • Toast bread, either on the grill top or toaster.
  • In a pan with butter, cook SPAM until browned, about 5 minutes per side.
  • Spread your favorite sandwich spread (mustard or mayo) on your toast; I prefer a nice spicy brown mustard. Add SPAM, grilled onions and pickle slices. Add lettuce and tomato or pickled jalapenos if it floats your boat. Sometimes you can switch it up and use RAW ONION, instead of grilled. Go crazy! It's your SPAM; do what you want.

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), finely chopped
4 hard-cooked eggs, peeled and chopped
1 (8 ounce) package shredded Cheddar cheese
½ cup finely chopped onion
½ cup mayonnaise
¼ cup chili sauce
½ teaspoon salt
¼ teaspoon hot sauce
12 hamburger buns, split

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine luncheon meat, eggs, Cheddar cheese, and onion in a bowl. Add mayonnaise, chili sauce, salt, and hot sauce. Mix well.

8 slices whole wheat bread
8 slices Spam, - 1/4-inch thick (regular or low sodium)
8 slices cheddar cheese, - 1/8-inch thick
2 fresh large tomatoes, cut in 1/2-inch thick slices
1 small sweet onion, cut in 1/8-inch thick slices
deli style mustard
butter

Steps:

  • Take two pieces of bread and spread on some spicy Deli mustard.
  • On a piece of bread, make one layer each of sliced onion, SPAM, Cheddar Cheese, and Tomato.
  • Lightly butter the remaining piece of bread and then carefully flip the entire sandwich upside down into a non-stick pan on medium-low heat. Lightly butter the other piece of bread which is now on top.
  • Cook covered with a suitable lid over medium-low heat, flipping once after about six minutes, until bread is browned and cheese is melted.
  • Sandwiches will be HOT when done so it's best to let them cool on a plate for 5 minutes or so to help avoid burning your tongue or roof of mouth. Grab a knife, some paper towels, a little catsup and ENJOY!
