Categories     easy, quick, side dish

Time 10m

Yield 6 servings

Number Of Ingredients 5

1 large or 2 small Napa cabbages (about 2 pounds), cut horizontally into 1 1/2-inch chunks (yielding about 14 to 15 cups, lightly packed)
3 tablespoons safflower or canola oil
2 tablespoons unsalted butter
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt

Steps:

  • In a sink filled with cold water, wash the cabbage, lifting it in and out of the water, and drain in a colander. Heat the oil in a saucepan until hot, add the butter and, as soon as it melts, add the wet cabbage. Cover and cook over medium-to-high heat, stirring occasionally, for 4 to 5 minutes, until the cabbage is wilted and tender but still slightly firm. The cabbage will sizzle initially but then will stew as the water emerges from it. Mix in the pepper and salt and serve immediately.

Tips:

  • Choose the right Spam: Opt for the classic Spam with the blue label, as it provides the perfect balance of flavor and texture.
  • Prepare the Spam: To enhance the Spam's flavor, slice it thinly and pan-fry it until crispy. This adds a satisfying crunch and extra savory notes.
  • Select Quality Napa Cabbage: Choose fresh, crisp Napa cabbage with tightly packed leaves. Avoid wilted or bruised leaves.
  • Enhance Cabbage Flavor: To intensify the cabbage's flavor, sprinkle it with salt and let it rest for 15 minutes before cooking. This draws out excess moisture and concentrates the flavors.
  • Use a Wok or Large Skillet: A well-seasoned wok or large skillet is ideal for stir-frying, ensuring even cooking and preventing the ingredients from sticking.
  • Control the Heat: Maintain high heat throughout the cooking process. This quick, intense heat seals in the flavors and prevents the vegetables from becoming soggy.
  • Add Aromatics: Incorporate aromatic ingredients like garlic, ginger, and green onions to elevate the dish's flavor profile.
  • Use a Flavorful Sauce: Create a simple yet flavorful sauce using soy sauce, rice vinegar, and sesame oil. This adds a delicious balance of salty, tangy, and nutty notes.
  • Serve Immediately: Enjoy the Spam and Napa Cabbage stir-fry while it's hot and fresh. The crispy Spam and tender cabbage pair perfectly with steamed rice or noodles.
