1 * 1 package (16 ounces) uncooked pasta
1 * 1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
1 * 1 tablespoon canola oil
1 * 1 jar (26 ounces) meatless spaghetti sauce, warmed

Steps:

  • 1. Cook pasta according to package directions. 2. Meanwhile, in large skillet, saute the sausage, peppers and onion in oil until vegetables are crisp-tender. 3. Drain pasta; divide among six serving plates. 4. Top with spaghetti sauce. Using a slotted spoon, top with sausage mixture.

1 tablespoon olive oil
½ cup chopped onion
1 teaspoon minced garlic
1 pound kielbasa sausage, sliced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (4 ounce) can sliced mushrooms
1 teaspoon white sugar
1 teaspoon balsamic vinegar
kosher salt and ground black pepper to taste
1 pinch crushed red pepper, or to taste
1 (16 ounce) package penne pasta
1 cup frozen peas
3 leaves fresh basil, julienned, or more to taste
1 cup shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Bring a large pot of lightly salted water to a boil for pasta.
  • Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
  • Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
  • Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

My parents came up with this idea one day before pay day when we didn't have much food in the house. All we had were spaghetti noodles, sauce, a ring of kielbasa, olives and mushrooms. The kielbasa gives the spaghetti a smokey flavor to it that is really yummy!!!! :)

1 pkg spaghetti noodles
1 jar(s) spaghetti sauce (your choice)
1 ring of kielbasa sausage
1 can(s) olives - chopped and drained
1 can(s) mushrooms - chopped and drained

Steps:

  • 1. Set a pan of water onto the burner and throw in a handful of water. Heat the water until boiling.
  • 2. While the water is heating up, cut the kielbasa sausage into 1/2 inch thick slices and add them into a skillet. Add the Spaghetti sauce, chopped olives, and chopped mushrooms to the skillet as well and heat until sauce starts to bubble.
  • 3. When the water in the pan starts to boil, add the Spaghetti noodles to the water and let them boil until al-dente (Tender). Strain the water out of the noodles into a collender, put the noodles back into the pan and pour the Spaghetti sauce over the noodles, toss it together (Like a salad) making sure all of the noodles are coated with the sauce mixture.

1 lb spaghetti
14 ounces polska kielbasa, sliced 1/4 inch thick on a diagonal (I use Hillshire Farm made with pork, turkey and beef, no msg)
2 tablespoons tomato paste or 1 cup tomato sauce
1/2 cup sofrito sauce, my Sofrito (or store bought)
4 garlic cloves, finely chopped
1 chicken bouillon cube
1 teaspoon dried oregano
2 cups water
2 cups reserved pasta water
3 tablespoons olive oil
salt & freshly ground black pepper
chopped fresh cilantro
parmesan cheese

Steps:

  • Heat a large pot of salted water to boil for spaghetti, cook according to package al dente, reserving 2 cups or more of pasta water.
  • Heat a large, deep skillet over med heat. Add olive oil and kielbasa. Cook, stirring occasionally until brown about 3 to 4 minutes.
  • Add garlic, cook stirring for 1 minute. Add sofrito, cook stirring for 3 minutes. Add chicken bouillon cube, oregano and black pepper to taste. Cook stirring for 1 minute. Add tomato paste (or tomato sauce), cook stirring 1 additional minute.
  • Stir in 2 cups of water, bring to boil, then reduce to simmer stirring occasionally for 30 minutes.
  • After 30 minutes, add 1 cup or more of pasta water depending on how thin or thick you like your sauce. Add drained pasta, toss to combine.
  • Garnish with Parmesan cheese and chopped cilantro.

16 ounces kielbasa, sliced (your favorite brand and flavor, comes precooked)
1 medium onion, diced
4 garlic cloves, minced
15 ounces diced tomatoes
4 ounces tomato paste
14 1/2 ounces beef broth
2 tablespoons dried basil
1 teaspoon marjoram
1 teaspoon thyme
1 tablespoon oregano
1/4 teaspoon red pepper flakes
salt and pepper
1/2 lb cooked angel hair pasta (or any pasta you like)

Steps:

  • Slice kielbasa into bite sized pieces and saute over medium high heat in a dutch oven or large pot. Stir occasionally until browned on both sides and slightly caramelized. Remove from pot, cover, keep warm.
  • Using the juices from the kielbasa, sauté onions until soft (add a little oil if needed) and just as onions become soft, add garlic and sauté 1 minute.
  • Add diced tomatoes, tomato paste, and beef broth. Stir until combined.
