PASTA WITH BEANS AND MUSSELS

Provided by Mark Bittman

Categories     dinner, pastas, appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 10

3 pounds mussels, well washed
Salt
freshly ground black pepper
1/2 pound rigatoni or other cut pasta
2 tablespoons extra virgin olive oil, more for drizzling
2 cloves garlic, peeled and smashed
1/4 teaspoon red chili flakes, or to taste
1 cup cooked cannellini or borlotti beans, drained
2 tablespoons dry white wine
1 cup chopped fresh parsley

Steps:

  • Put mussels in a large pot with a lid. Cover, turn heat to medium-high and when you hear the mussel liquid boiling, reduce heat to maintain a steady bubble; you will hear it and see steam escaping. Shake pot now and then; when mussels open, remove them. Let cool slightly and shuck, reserving cooking liquid. When liquid has cooled, strain it.
  • Meanwhile, bring a pot of salted water to a boil, cook pasta until not quite done (figure about 2 minutes short of where you would usually cook it), drain and set aside.
  • Put oil in a large skillet over medium-high heat; add garlic and chili flakes and cook for about 1 minute. Add beans, wine, pasta and mussels; reduce heat to medium-low and stir to combine. Add as much reserved mussel liquid as mixture can accommodate without becoming too soupy. Cook, stirring gently, until pasta is fully cooked and everything is warmed through; add more liquid if you like. Adjust seasoning as needed, drizzle with a bit more olive oil if you like, sprinkle with parsley and serve.

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 15

5 to 6 cups chicken stock
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1/4 pound chunk pancetta chopped into small dice
4 cloves garlic, chopped
1 pound spaghetti
1 medium onion, chopped
2 carrots, cut into a small dice
1 fresh bay leaf
5 to 6 sprigs fresh thyme
1 (15-ounce) can Roman beans or small white beans (recommended: Goya brand)
Salt and freshly ground black pepper
1 cup dry white wine, eyeball it
1 cup grated Parmigiano-Reggiano
A generous handful flat-leaf parsley, finely chopped

Steps:

  • Place the stock in a sauce pot and warm it over medium heat then reduce to simmer.
  • Heat the extra-virgin olive oil and the butter in a large, deep skillet over medium to medium-high heat. Add the pancetta to brown slightly. Next add the garlic and spaghetti and toast the noodles lightly, 3 to 4 minutes. Add onions and carrots, bay leaf and thyme, and season with salt and pepper. Soften veggies a bit, 5 minutes. Add wine and allow it to be completely absorbed. Add beans then add a few ladles of stock and stir the pasta. Keep adding stock a few ladles at a time allowing liquids to be mostly absorbed before adding more, as if you were preparing a risotto. When liquids are absorbed and spaghetti is cooked to al dente, 12-15 minutes, stir in cheese. Adjust salt and pepper. Turn off heat and stir another minute. Remove the bay leaf and thyme stems. Serve in shallow bowls and garnish with lots of parsley.

Time 50m

Number Of Ingredients 11

2 tablespoons olive oil
2 cloves garlic, minced
1 red onion, very finely chopped
1 red bell pepper, cut into 1/4-inch dice
1 cup cooked white beans
1 cup chicken stock
1/4 cup finely chopped flat-leaf parsley
1/2 teaspoon hot pepper flakes
Salt and freshly ground black pepper
8 to 10 ounces spaghetti
Freshly grated Parmigiano-Reggiano for serving

Steps:

  • Prepare the sauce: heat the olive oil in a non-stick frying pan. Add the garlic, onion, bell pepper and cook over medium heat until soft, not brown, about 4 minutes.
  • Stir in the white beans and cook for 1 minute. Add the vegetable stock, half the parsley, the pepper flakes, and salt and pepper to taste. The sauce should be highly seasoned. Simmer until the beans are quite soft. Coarsely mash half the beans with a fork.
  • Cook the spaghetti in a large pot in 4 quarts rapidly boiling salted water until al dente, about 8 minutes. Drain well. Meanwhile, bring the sauce to a boil. Transfer the spaghetti and bean sauce to a large shallow bowl and mix well. Sprinkle the spaghetti with the remaining parsley and serve at once with freshly grated cheese on top.

Yield Serves 4

Number Of Ingredients 8

1/2 extra-virgin olive oil
4 cloves garlic, thinly sliced
1 cup dry white wine
2 pounds small mussels, scrubbed and debearded
1 pound spaghetti
1/4 cup finely chopped Italian parsley
Salt and freshly ground black pepper
1 tablespoon hot red pepper flakes

Steps:

  • 1. Bring 6 quarts of water to a boil in a large pot, and add 2 tablespoons salt.
  • 2. In a 12-inch sauté pan, heat the olive oil over medium-high heat. Add the garlic and cook until light golden brown, about a minute. Add the wine, raise the heat, and bring to a boil, then add the mussels. Cook, stirring and tossing, until all of the mussels have opened, about 4 minutes.
  • 3. Meanwhile, drop the pasta into the boiling water and cook until al dente; drain well.
  • 4. Add the pasta to the pan with the mussels and cook over high heat for 1 minute. Add the parsley and season with salt and pepper to taste. Sprinkle with red pepper flakes and serve immediately.

Tips:

  • Use Fresh Mussels: Fresh mussels have a briny, sweet flavor and a tender texture. Look for mussels that are tightly closed and have no cracks or chips in their shells.
  • Clean the Mussels Properly: Before cooking, clean the mussels by scrubbing them with a brush to remove any dirt or debris. Remove the beards by pulling them out with your fingers.
  • Cook the Mussels Until They Open: Mussels should be cooked until they open. This usually takes about 5-7 minutes. Discard any mussels that do not open after cooking.
  • Use Good Quality White Beans: White beans add a creamy texture and nutty flavor to the dish. Use dried white beans and soak them overnight before cooking. You can also use canned white beans, but be sure to rinse them well before using.
  • Add Vegetables for Extra Flavor: Vegetables such as garlic, onion, celery, and carrots add flavor and texture to the dish. Sauté the vegetables in olive oil until they are softened before adding the mussels and white beans.
  • Use a Good Quality White Wine: White wine adds a subtle acidity and flavor to the dish. Use a dry white wine such as Sauvignon Blanc or Pinot Grigio.
  • Season the Dish to Taste: Season the dish with salt, pepper, and red pepper flakes to taste. You can also add a squeeze of lemon juice or a dollop of butter for extra flavor.

Conclusion:

Spaghetti with mussels and white beans is a delicious and easy-to-make seafood dish. It is perfect for a weeknight meal or a special occasion. The combination of mussels, white beans, and vegetables in a flavorful white wine sauce is sure to please everyone at the table.
