SEARED SCALLOP PASTA WITH BURST TOMATOES AND HERBS

Seared Scallop Pasta With Burst Tomatoes and Herbs image

Although usually designated as a "something special" ingredient, scallops make a perfect weeknight dinner because they cook in minutes. To get a good, crisp sear, be patient (it's hard for us, too) and let the pan get quite hot before adding the scallops. Once you do, leave them alone to ensure a deeply golden crust. Toss them with pasta and candy-colored cherry tomatoes that burst and get coaxed into a jammy sauce. Finish with a showering of fresh, tender herbs and a drizzle of olive oil.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 9

Kosher salt and black pepper
1 pound linguine fini or other long, thin pasta
4 tablespoons olive oil, plus more for drizzling
2 shallots, thinly sliced into rings
1 1/4 pounds Sun Gold, cherry or grape tomatoes
2 garlic cloves, thinly sliced
Pinch of red-pepper flakes (optional)
1 pound large sea scallops, patted dry
1 1/2 cups roughly chopped mixed herbs, such as tarragon, mint, parsley and chives, plus more for serving

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 1/2 cups pasta cooking water, then drain pasta.
  • Wipe out the pot and heat 2 tablespoons olive oil over medium. Add the shallots and cook until they begin to soften, 2 to 3 minutes. Add the tomatoes and cook, stirring occasionally, until they start to burst, 5 to 7 minutes. Add about 1/3 cup reserved pasta water, and press the tomatoes gently with the back of a spatula or wooden spoon to get them nice and jammy. Stir in the garlic and red-pepper flakes, if using, and cook, allowing the sauce to simmer, 1 to 2 minutes. Season with salt and pepper; set aside.
  • Season the scallops well on both sides with salt and pepper. In a 12-inch skillet, heat the remaining 2 tablespoons olive oil over high. When the oil shimmers, add the scallops, working in batches to avoid crowding the pan, and cook until golden brown and crisp, flipping once, 1 to 2 minutes per side.
  • Add the pasta, 1 1/2 cups herbs and 1/4 cup reserved pasta water to the pot with the tomatoes and toss to coat, adding additional pasta water if needed. Divide the pasta among shallow bowls and top with scallops. Garnish with additional herbs and a drizzle of olive oil, if desired.

PASTA WITH MARINATED TOMATOES AND SUMMER HERBS

Pasta With Marinated Tomatoes and Summer Herbs image

The easiest summer dinner known to man, pasta con salsa crudo, is a one-bowl, infinitely variable riot of seasonal flavors. It can be made with fancy Italian tuna and local heirloom tomatoes for foodies, or with supermarket mozzarella and tomatoes for children, or with excellent olives and extra pine nuts for vegetarians. It puts you in the kitchen for about a half-hour at the tail end of lunchtime. After that, all there is to do is cook the pasta, and serve with or without crusty bread, boiled corn, sliced tomatoes, or a nice, simple green salad.

Provided by Julia Moskin

Categories     dinner, quick, pastas, appetizer, main course

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 11

About 1 1/2 pounds ripe tomatoes, halved or quartered if small, diced if large
Salt
2 cans olive oil-packed tuna or 1 pound mozzarella cheese, diced (optional)
2/3 cup pitted oil-cured black olives, halved, or 1/2 cup pitted green olives, chopped, or 3 tablespoons capers (optional)
2/3 cup chopped fresh herbs (basil, parsley, mint, chives, cilantro, scallion tops, or a combination), more for garnish
Freshly grated zest of 1 lemon (optional)
About 3/4 cup extra virgin olive oil
Freshly ground black pepper
2 pounds short pasta, like fusilli, farfalle or penne
Hot red pepper flakes (optional)
1/2 cup toasted pine nuts (optional)

Steps:

  • Up to 4 hours before serving, put tomatoes in a large bowl and sprinkle all over with salt. Set aside for 30 minutes, then drain off liquid.
  • Add tuna and its oil, olives or capers, if using. Add herbs and zest. Add olive oil, salt and pepper to taste and stir gently, flaking tuna into pieces. Cover and set aside at least 1 hour or up to 3 hours, stirring occasionally.
  • Cook pasta in plenty of boiling salted water. Drain very well. Combine tomatoes and pasta well, then taste and add more oil, salt and pepper to taste. Add red pepper flakes if desired. Sprinkle with pine nuts, if using, and chopped herbs. Serve immediately.

PASTA WITH FRESH TOMATO-HERB SAUCE

Pasta with Fresh Tomato-Herb Sauce image

Categories     Herb     Pasta     Tomato     Low Fat     Feta     Basil     Bon Appétit

Yield Serves 4

Number Of Ingredients 8

2 cups chopped fresh tomatoes (3 medium)
2 ounces feta cheese, crumbled
1/2 cup finely chopped red onion
1/4 cup chopped fresh basil
1 tablespoon olive oil
2 large garlic cloves, pressed
1 tablespoon chopped fresh oregano
12 ounces 3/4-inch pasta shells, freshly cooked

Steps:

  • Combine first 7 ingredients in large bowl. Immediately add freshly cooked pasta. Toss well. Season generously with pepper and serve immediately.

Tips:

  • Use ripe, flavorful tomatoes: The key to a great tomato sauce is using ripe, flavorful tomatoes. Look for tomatoes that are deep red in color and have a firm texture.
  • Fresh herbs add a lot of flavor: Fresh herbs like basil, oregano, and thyme add a lot of flavor to tomato sauce. Be generous with the herbs and add them to the sauce at the end of cooking so they retain their flavor.
  • Don't overcook the sauce: Tomato sauce is best when it is cooked for a short period of time. Overcooking the sauce will make it lose its flavor and color.
  • Serve the sauce with your favorite pasta: Spaghetti, penne, and rigatoni are all great choices for serving with tomato sauce. You can also use the sauce to make a delicious pizza or lasagna.

Conclusion:

This spaghetti with fresh tomato and herbs is a simple yet delicious dish that is perfect for a quick and easy weeknight meal. The sauce is made with fresh, ripe tomatoes, garlic, onions, and fresh herbs, and it is cooked in just a few minutes. The spaghetti is then tossed with the sauce and served with grated Parmesan cheese. This dish is sure to please everyone at the table.
