1 small onion, grated
5 cloves garlic—1 chopped, 2 smashed and 2 grated
1 cup rice cereal crumbs, divided
1/2 cup rice milk
1 large egg
6 tablespoons chopped flat-leaf parsley, divided

2 tablespoons extra virgin olive oil, divided
2 cans (28 ounces each) crushed tomatoes
1 package (12 ounces) corn or rice spaghetti
1/2 teaspoon crushed red pepper flakes, or to taste

Steps:

  • In a large bowl, combine the beef, onion, chopped garlic, 1/2 cup cereal crumbs, milk, egg, 2 tablespoons parsley and 1 teaspoon salt; shape into eight 2-in. balls., In a large saucepan, heat 1 tablespoon olive oil over medium heat. Add the smashed garlic and cook until golden, about 2 minutes. Add the tomatoes and bring to a simmer, stirring occasionally. Submerge the meatballs in the sauce; bring to a simmer and cook, covered and stirring occasionally, for 20 minutes. Season with about 1 teaspoon salt., In a large pot of boiling salted water, cook the spaghetti until al dente, about 15 minutes; drain and toss with the sauce., To make the garlic crumbs, heat the remaining 1 tablespoon olive oil in a small skillet over medium heat. Add the grated garlic, remaining 1/2 cup cereal crumbs, red pepper flakes and 1/4 teaspoon salt. Cook until toasted, 1 to 2 minutes. Let cool, then stir in the remaining 1/4 cup parsley. To serve, divide the spaghetti among shallow bowls and top with meatballs and garlic crumbs.

200g/7oz dried spaghetti
1 fat garlic clove
handful fresh parsley leaves
3 tbsp extra virgin olive oil
2 pinches dried chilli flakes, to taste
sea salt

Steps:

  • Add 2 tablespoons salt to 2 litres water and bring to the boil in a large saucepan. Add the spaghetti and return to the boil quickly, then cook until al dente.
  • Finely chop the garlic and parsley together.
  • Heat the oil in a frying pan over a low heat. Add the garlic and parsley and fry for 1 minute, or until the garlic is softened but not coloured. Add the chilli flakes and cook for 1 more minute.
  • Drain the spaghetti lightly, then add to the frying pan with the water still clinging to it. Mix to coat with the oil. Add a little extra cooking water if needed. Sprinkle the spaghetti with the parsley, toss, season with salt and serve.

4 tbsp extra virgin olive oil
2 thumb-sized red chillies , sliced and most seeds removed
3 garlic cloves , chopped
1 tsp fennel seeds
10 slices fennel salami , chopped
140g cherry tomatoes , halved
400g spaghetti or bucatini pasta
300g large raw prawns , shells removed
2 slices crusty bread , pulsed to crumbs
large handful flat-leaf parsley , chopped
zest 1 lemon

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a large frying pan, heat 3 tbsp of the oil. Add the chillies and most of the garlic (save 1 tsp for the breadcrumbs) and sauté until golden, about 2-3 mins. Add the fennel seeds and salami, and stir for 1 min. Tip in the tomatoes and a pinch of salt, then sauté for a further 10 mins.
  • Tip the breadcrumbs onto a baking sheet, pour over the remaining oil, season and bake for 7 mins. Toss the remaining garlic through the crumbs and bake for 3 mins more. Remove and add the parsley and lemon zest.
  • Cook the pasta in boiling salted water to packet instructions, about 9 mins. Heat the sauce and just before the pasta is ready, stir in the prawns so that they cook through. Drain the pasta and mix with the sauce, then sprinkle with the crumbs.

1/4 Turkish bread, coarsely torn
1 lemon
1/4 cup extra virgin olive oil
2 garlic cloves, finely chopped
2 red bird's eye chilies, seeded, finely chopped
3 anchovy fillets, finely chopped
1/4 cup flat leaf parsley, finely shredded
375 g spaghetti

Steps:

  • Place the bread in the bowl of a food processor and process until coarse breadcrumbs form.
  • Use a zester to remove the rind from the lemon. (Alternatively, use a vegetable peeler to peel rind from lemon. Use a small, sharp knife to remove white pith from rind. Cut rind into very thin strips.) Juice the lemon.
  • Heat 2 tablespoons of the oil in a frying pan over medium heat. Add breadcrumbs and cook, stirring continuously, for 2-3 minutes or until breadcrumbs are golden and crisp. Transfer to a plate.
  • Heat the remaining oil in the pan over medium heat. Add the garlic, chilli and anchovies and cook, stirring, for 1 minute or until aromatic. Add lemon rind, juice and parsley leaves. Remove from heat.
  • Meanwhile, cook the spaghetti in a large saucepan following packet directions until al dente. Drain well.
  • Add the spaghetti to the garlic mixture and toss to coat. Add half the breadcrumbs and toss to coat.
  • Spoon evenly among serving bowls. Sprinkle with remaining crumbs and serve immediately.
