2 large cloves garlic, minced (4 teaspoons)

2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
3 ounces pancetta, cut into 1/4-inch pieces (2/3 cup)
2/3 cup minced yellow onion (1/2 medium)
2/3 cup minced carrot (2 medium)
2/3 cup minced celery (1 rib)
1 pound ground beef, such as chuck or sirloin
1 pound ground pork
3 tablespoons plus 1 teaspoon tomato paste
1 cup dry white wine
1 1/4 cups whole milk
5 sprigs thyme, tied into a bundle with kitchen twine
1 to 2 fresh bay leaves
1 can (28 ounces) whole peeled tomatoes, pureed (with juice) in a blender (or through a food mill)
6 to 7 cups Basic Chicken Stock
Coarse salt and freshly ground pepper

Steps:

  • Heat butter and oil in a large pot over medium-high heat until butter starts to sizzle, then reduce heat to medium. Add pancetta, and cook until golden and fat has rendered, about 2 1/2 minutes. Add onion, carrot, and celery, and cook, stirring often, until just beginning to brown around edges, about 10 minutes (adjust heat if mixture is browning too quickly).
  • Add beef and pork and cook over medium heat, stirring frequently and separating meat with the back of a wooden spoon, until no longer pink, 8 to 10 minutes. Once meat is completely browned, pour off any excess fat. Add tomato paste and cook 1 minute, stirring to intensify sweetness.
  • Pour in wine and cook, stirring to scrape up browned bits from bottom of pot, until liquid has evaporated, 6 to 7 minutes. Add 1 cup milk and cook until reduced by half, about 3 minutes (don't worry if it appears slightly curdled, it will smooth out again). Add thyme bundle and bay leaves, and then pour in tomatoes and 6 cups stock. Season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper.
  • Bring to a boil, then reduce heat to a very low simmer and cook, partially covered, 3 to 3 1/2 hours, skimming the fat from the surface with a ladle periodically. If at any time the sauce appears too dry, add up to 1 cup more stock as necessary. The finished sauce should have the consistency of a loose chili. Stir in remaining 1/4 cup milk and season with salt and pepper, as desired. If not serving immediately, let cool completely before transferring to airtight containers. Refrigerate up to 3 days or freeze up to 3 months; defrost in the refrigerator before using.

  • Make the Bechamel Sauce: In a small saucepan, combine butter and flour. Stir in nutmeg, and season with salt and pepper. Place over medium heat and stir in milk. Bring to a boil. Reduce heat to medium-low, and continue cooking until the mixture begins to thicken, about 2 minutes. Remove from heat, and set aside.
  • To assemble: Bring a large pot of salted water to a boil. Using a pasta machine, roll dough into long sheets as thin as possible. Let sheets dry for a few minutes. Then cut them into sections, each about 13 inches long. Add oil and lasagna sheets to boiling water. Cook, stirring gently to prevent them from sticking to one another, for about 2 minutes. Drain, and rinse under cold running water. Lay sheets out on a clean kitchen towel, and set aside until ready to use. Be sure not to let them stand for more than 30 minutes.
  • Preheat the oven to 350 degrees. Lightly butter a 13-by-9-inch baking dish. Spoon a little of the meat sauce into the bottom of the prepared baking dish, and spread to coat. Then, layer with lasagna sheets, one-sixth of the bechamel sauce, one-sixth of the meat sauce, and a little Parmesan. Repeat the layers five more times. Top with remaining Parmesan and pieces of butter. Bake until cheese begins to turn golden brown, 30 to 45 minutes. Serve warm.

1/4 teaspoon salt, plus more for water
1 1/2 pounds cherry tomatoes or vine-ripened tomatoes, or one twenty-eight-ounce can Italian plum tomatoes
8 ounces thin spaghetti
1/4 cup extra-virgin olive oil
4 garlic cloves, cut into 1/8-inch-thick slices
1/4 teaspoon crushed red-pepper flakes
1/4 cup loosely packed fresh basil or fresh flat-leaf parsley leaves, torn
Freshly grated Parmigiano-Reggiano cheese (optional)

Steps:

  • Cover and bring 3 quarts of salted water to a boil in a large stockpot.
  • If using cherry tomatoes, wash and stem. If using vine-ripened tomatoes, prepare an ice-water bath; bring a large pot of water to a boil. Using a paring knife, score nonstem end of each tomato with a shallow x. Blanch tomatoes in boiling water for 30 seconds. With a slotted spoon, transfer tomatoes to ice bath (keep water simmering). Using a chefs knife, cut flesh into 1/4-inch strips; set aside. Press cores of tomatoes through a sieve; discard seeds. If using canned tomatoes, strain, and pass through a food mill fitted with a fine disk.
  • Drop pasta into boiling water; stir. Cook until al dente, about 11 minutes.
  • Meanwhile, place a 12-inch skillet over medium heat; add oil. Add garlic; cook, stirring occasionally, until garlic is lightly golden, about 30 seconds. Add red-pepper flakes and 1/4 teaspoon salt. Cook until the garlic is medium golden, about 1 minute.
  • Increase heat to high. Tilting pan at an angle, add tomato strips and pulp from sieve. Cook, swirling pan occasionally, until tomatoes begin to break down, cherry tomatoes begin to burst, or canned tomatoes begin to thicken, 5 to 6 minutes. If using cherry tomatoes, mash a few with a spoon (if they start to get too dry, add a little water from the pasta stockpot).
  • Drain pasta in a colander, reserving 1 cup cooking liquid in case the sauce gets too dry. Add pasta to sauce; cook until sauce clings to pasta, 3 to 4 minutes. Stir in basil; cook 30 seconds more. Divide among bowls; sprinkle with cheese, if using. Serve.

1/2 onion, finely diced (1/2 cup)

One 28-ounce can best-quality tomatoes, pulsed in a blender
1/2 cup cream or milk
Freshly ground black pepper

1 pound spaghetti or other pasta
1 1/2 tablespoons unsalted butter
1/2 cup freshly grated Parmesan cheese

Steps:

  • Heat a saucepan over low heat. Add the olive oil, onion, carrot, and celery and saute over low heat until lightly caramelized, about 12 minutes. Add the pancetta and beef and cook, separating the meat into small pieces, until browned, 10 to 15 minutes. Drain off most of the fat. Stir in 1 teaspoon salt.
  • Pour the wine into the beef mixture to deglaze the pan; stir to loosen the browned bits on the bottom of the pan. Cook for about 2 minutes, until the wine is almost evaporated. Add the tomatoes and stir in the cream, black pepper, and red-pepper flakes. Gently simmer for about 40 minutes, until the sauce has reduced and thickened.
  • Start cooking the spaghetti when the sauce is within 10 minutes of being done. Bring a large pot of water to a boil over high heat. Add the spaghetti and a generous pinch of salt to the boiling water and cook until al dente, about 8 minutes. Drain.
  • Stir the butter into the bolognese sauce and season to taste with salt and pepper. Spoon the sauce over the pasta and serve with grated Parmesan cheese on top.
