Spaghetti squash, a unique and versatile vegetable, takes center stage in this delightful dish, complemented by the savory flavors of ham and sweet peas. This low-carb and gluten-free meal is a delectable option for those seeking a healthier alternative to traditional pasta.

The recipe begins with roasting the spaghetti squash until tender, revealing its spaghetti-like strands. While the squash roasts, diced ham and frozen peas are sautéed in butter, creating a flavorful filling. Once the squash is cooked, it is topped with the ham and pea mixture, creating a colorful and appetizing dish.

For those seeking a creamy variation, a simple sauce made from Greek yogurt, sour cream, and Parmesan cheese is whisked together and drizzled over the spaghetti squash. This adds a rich and tangy flavor that perfectly complements the ham and peas.

If a cheesy delight is desired, a blend of mozzarella and Parmesan cheese is sprinkled over the spaghetti squash before baking. This creates a golden brown, bubbly topping that adds an extra layer of flavor and texture.

For those following a vegan or vegetarian diet, the ham can be omitted and replaced with more vegetables, such as diced zucchini or mushrooms. The recipe also offers a variation using a slow cooker, allowing for easy preparation and a hassle-free meal.

No matter which variation you choose, this spaghetti squash with ham and peas is sure to satisfy your taste buds and leave you feeling content and nourished.
