The flesh of spaghetti squash comes out in long strands, very much resembling the noodles for which it is named. In this recipe, the 'noodles' are tossed with vegetables and feta cheese. You can substitute different vegetables, but be sure to use ones that have contrasting colors.

Tips and Conclusion

Tips:

  • Choose the Right Spaghetti Squash: Look for spaghetti squash that is firm and has a deep yellow color. Avoid squash that is bruised or has soft spots.
  • Prick the Squash: Before cooking, use a fork to prick the squash all over. This will help prevent the squash from exploding in the oven.
  • Cook the Squash Properly: Bake the squash until it is tender and easily pierced with a fork. Overcooking will make the squash mushy.
  • Let the Squash Cool: Once the squash is cooked, let it cool slightly before handling. This will make it easier to scrape the flesh into spaghetti-like strands.
  • Use Fresh Ingredients: Fresh tomatoes, basil, and ricotta cheese will give your dish the best flavor.
  • Season to Taste: Don't be afraid to season your dish to taste. Add more salt, pepper, or garlic powder to your liking.

Conclusion:

Spaghetti squash with fresh tomatoes and ricotta cheese is a delicious and healthy meal that can be enjoyed by people of all ages. It is a great source of vitamins, minerals, and fiber. The squash is also low in calories and carbohydrates, making it a good choice for people who are watching their weight. This dish is easy to make and can be tailored to your liking.
