1/2 tablespoon olive oil
3/4 cup Parmesan cheese crumbs
1 tablespoon parsley
2 cup Ragu® Traditional Tomato Sauce
12 cooked meatballs

Spray a 12 cup muffin tin pan well with cooking spray. Spoon noodle mixture into tins, filling it nearly to the top. Time 45m

Yield 12

Number Of Ingredients 6

6 ounces spaghetti
1 ½ tablespoons olive oil
cooking spray
1 ½ cups grated Parmesan cheese, divided
1 ½ cups tomato-based pasta sauce
12 (1 ounce) cooked meatballs

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 7 minutes. Drain and toss in a bowl with olive oil; refrigerate until cooled, about 15 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
  • Toss cooled spaghetti with 1 cup Parmesan cheese. Divide spaghetti between the 12 prepared muffin cups, arranging noodles in each cup to create "nests" for the meatballs.
  • Top each "nest" with 1 tablespoon pasta sauce, 1 meatball, and 1 more tablespoon pasta sauce, respectively. Sprinkle remaining Parmesan cheese over the tops of each meatball "nest."
  • Bake in the preheated oven until pasta and meatballs are heated through and cheese melts, 20 to 25 minutes. Cool slightly before transferring muffin bites to a serving platter.

Tips:

  • Use a muffin tin with 12 cups to ensure the meatballs are evenly sized and cooked.
  • To save time, precook the meatballs and spaghetti separately before assembling the muffin bites.
  • For a more flavorful meatball, add some grated Parmesan cheese or chopped fresh herbs to the meat mixture.
  • If you don't have spaghetti sauce, you can use a jar of marinara sauce or even pizza sauce.
  • Be careful not to overfill the muffin cups, as the meatballs will expand as they cook.
  • Bake the muffin bites until the meatballs are cooked through and the cheese is melted and bubbly.
  • Serve the muffin bites warm with additional spaghetti sauce, grated Parmesan cheese, and chopped fresh basil.

Conclusion:

Spaghetti and meatball muffin bites are a fun and easy way to enjoy a classic Italian dish. They're perfect for parties, potlucks, or a quick and easy weeknight meal. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal that the whole family will love.
