In the realm of culinary delights, embark on a savory journey with Spätzle Baked with Ham and Gruyère, a dish that tantalizes taste buds and captivates hearts. Originating from the Swabian region of Germany, Spätzle, the star of this dish, are small, delicate dumplings handcrafted from a simple batter of flour, eggs, and salt. These dumplings are then skillfully pan-fried until golden brown, infusing them with a delightful crispiness that perfectly complements their soft and tender interior.

In this symphony of flavors, the Spätzle is lovingly combined with succulent ham, a versatile and flavorful protein that adds a hearty and smoky dimension to the dish. Thinly sliced or diced, the ham's salty and savory notes harmoniously blend with the Spätzle, creating a captivating interplay of textures and tastes.

To elevate this culinary creation to new heights, a generous helping of Gruyère cheese is incorporated, acting as the golden crown atop this delectable dish. Renowned for its rich, nutty flavor and smooth, creamy texture, Gruyère melts beautifully, enveloping the Spätzle and ham in a velvety embrace. As the dish bakes in the oven, the Gruyère forms a golden-brown crust, adding an irresistible crunch and an alluring visual appeal that is sure to tempt the senses.

Accompanying this main course are two enticing recipes that further enhance the overall dining experience. The first, a classic Béchamel sauce, adds a touch of velvety richness and creaminess to the dish, while the second, a vibrant green salad, provides a refreshing contrast to the hearty Spätzle and ham. Together, these components orchestrate a culinary symphony that is both satisfying and delightful, leaving diners craving for more.

Savory Gruyère Bread With Ham image

The ham and cheese-filled loaf is the savory quick bread you didn't know you needed. We love it with Gruyère, but sharp cheddar works just as well.

Number Of Ingredients 11

4 tablespoons (½ stick/56 grams) unsalted butter, melted and cooled, plus more for the pan
2½ cups (325 grams) all-purpose flour, plus more for the pan
1½ teaspoons baking powder
1 teaspoon fine sea salt
½ teaspoon baking soda
1 cup (180 grams) coarsely chopped ham
3 tablespoons thinly sliced scallions, white and green parts (optional)
1 tablespoon chopped fresh thyme leaves
2 cups (8 ounces/198 grams) grated Gruyère or sharp cheddar cheese
2 large eggs
1 cup (240 milliliters) buttermilk

Steps:

  • Heat the oven to 350ºF. Butter and flour a metal 9 × 5-inch loaf pan and set it aside.
  • In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Stir in the chopped ham, scallions if using, thyme, and 1¾ cups (7 ounces) of the Gruyère (reserving the rest for topping). In a separate bowl, whisk together the melted butter, eggs, and buttermilk. Add the wet mixture to the flour mixture and stir to combine. The batter will be thick.
  • Transfer the batter to the prepared loaf pan and spread it out evenly, smoothing the top. Sprinkle the remaining ¼ cup (1 ounce) cheese over the top. Bake until the top springs back when lightly pressed and a skewer inserted in the center comes out with some moist crumbs attached, 45 to 55 minutes.
  • Transfer the pan to a wire rack and let it cool for 10 minutes. Then remove the bread from the pan and let it cool completely on the wire rack.

Time 1h25m

Yield 6 serving(s)

Number Of Ingredients 10

1 3/4 cups milk
4 large egg yolks
1 large egg
3 cups all-purpose flour
1/4 teaspoon freshly grated nutmeg
salt & freshly ground black pepper
2 tablespoons peanut oil
1 tablespoon unsalted butter, cut into small pieces
1 1/2 cups shredded gruyere cheese (5 ounces)
1 medium white onion, thinly sliced

Steps:

  • In a small bowl, whisk the milk with the egg yolks and egg. In a large bowl, whisk the flour with the nutmeg, 1 teaspoon of salt and 1/4 teaspoon of pepper. Using a wooden spoon, stir the egg mixture into the flour, leaving a few lumps. Cover and refrigerate the batter for at least 1 hour or overnight.
  • Bring a large pot of salted water to a boil. Prepare a large bowl of ice water. Carefully hold a colander with large holes over the boiling water. Add about 1/2 cup of the batter to the colander and press it into the simmering water with a spatula or the back of a spoon. Repeat until all of the batter has been used. Cook the spaetzle for 2 minutes longer, then drain. Immediately transfer the spaetzle to the ice water, swirling the dumplings until all of the ice melts. Drain and transfer to a large bowl. Stir in 1 tablespoon of the oil, season with salt and pepper and toss to coat.
  • Preheat the oven to 400°. Oil a 9-by-13-inch baking dish. Spread the spaetzle in the dish and dot with the butter. Sprinkle with the cheese and bake for about 20 minutes, or until the spaetzle is hot and the cheese is just melted.
  • Meanwhile, heat the remaining 1 tablespoon of oil in a medium skillet. Add the onion and cook over high heat until softened, about 1 minute. Reduce the heat to moderately low and cook, stirring occasionally, until lightly browned, about 15 minutes. Scatter the onion over the spaetzle and serve.

1 teaspoon salt, divided
1/4 teaspoon baking powder
2 1/4 cups skim milk, divided
4 large eggs, divided
2 quarts water
cooking spray
1 cup onion, chopped fine
3/4 cup turkey ham, diced (about 4 ounces)
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
3/4 cup gruyere cheese, shredded (3 ounces)

Steps:

  • Preheat oven to 375°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Sift together 1 2/3 cups flour, 1/2 teaspoon salt, and baking powder. Combine 3/4 cup milk and 2 eggs, stirring with a whisk. Add milk mixture to flour mixture, stirring with a whisk until combined. Let stand 10 minutes.

Tips:

  • For the best results, use fresh pasta. If you don't have fresh pasta on hand, you can use dried pasta, but be sure to cook it according to the package directions before adding it to the casserole.
  • Don't overcook the spaetzle. It should be cooked through, but still have a slight bite to it.
  • Use a good quality ham. A smoked ham will add a lot of flavor to the dish.
  • Don't be afraid to experiment with different cheeses. Gruyere is a classic choice, but you could also use cheddar, Swiss, or mozzarella.
  • Serve the casserole hot out of the oven. It's also delicious the next day, but the spaetzle will be a little softer.

Conclusion:

This spaetzle baked with ham and Gruyere is a delicious and easy-to-make dish that's perfect for a weeknight meal. It's also a great way to use up leftover ham.
