ERIC'S SAUTEED GROUPER WITH BABY BOK CHOY AND SOY GINGER VINAIGRETTE

Eric's Sauteed Grouper with Baby Bok Choy and Soy Ginger Vinaigrette image

Chef Eric Ripert, of Le Bernardin in New York City, enjoys exploring foods from many parts of the world. Sauteed grouper prepared with baby bok choy, ginger, and soy and oyster sauces is an example of his interest in Asian foods and ingredients.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 14

Fine sea salt
12 heads baby bok choy (about 2 pounds), roots trimmed, leaves separated and cleaned
1 tablespoon finely diced ginger
2 tablespoons shallots, finely diced
1 tablespoon oyster sauce
2 tablespoons sherry vinegar
6 tablespoons canola oil
1 tablespoon soy sauce
1/2 teaspoon freshly squeezed lime juice
Pinch of cayenne pepper
2 tablespoons unsalted butter
4 seven-ounce grouper fillets
Freshly ground white pepper
1 tablespoon sesame seeds, toasted

Steps:

  • Over high heat, bring a large stockpot filled with salted water to a boil. Meanwhile, prepare an ice bath, and set aside. Add bok choy to the boiling water. Blanch until just tender, about 1 1/2 minutes. Immediately transfer bok choy to the ice bath to stop the cooking process. Drain, and set aside.
  • Place ginger and shallots in a medium mixing bowl. Whisk in oyster sauce and vinegar. Whisk in 4 tablespoons canola oil, soy sauce, lime juice, and cayenne pepper. Set aside. (Up to this point, the recipe can be prepared 2 hours ahead.)
  • In a large saucepan over high heat, bring 1/4 cup water to a boil. Whisk in butter, and lower the heat to medium-high. Season bok choy with salt and pepper, and add it to the pan. Cook until heated through, about 2 minutes.
  • Divide the remaining 2 tablespoons canola oil between two 10-inch nonstick skillets. Place skillets over high heat until oil is just smoking. Season both sides of the grouper with salt and pepper. Place two grouper fillets in each skillet, and saute until the fish is browned on the bottom side, about 3 minutes. Turn, and saute about 3 minutes more, until a metal cake tester inserted into the center of the fillets feels hot when touched to your lip. Remove from heat, and set aside.
  • Using a slotted spoon, transfer the bok choy from the saucepan, and arrange it in the center of four dinner plates. Top with grouper. Whisk sauce lightly, and spoon it around the bok choy. Sprinkle sesame seeds over the sauce, and serve immediately.

CURRIED CHICKEN SATAY WITH FRESH MINT-SOY VINAIGRETTE

Curried Chicken Satay with Fresh Mint-Soy Vinaigrette image

Provided by Food Network

Categories     appetizer

Time 1h30m

Yield 8 to 10 servings

Number Of Ingredients 15

24 (6-inch) bamboo or wooden skewers
2 skinless, boneless chicken breast halves
1 1/2 teaspoons curry powder
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
2 tablespoons peanut oil or vegetable oil
2 large egg yolks, beaten*
1/4 cup rice wine vinegar
2 tablespoons finely chopped fresh mint leaves
1 tablespoon soy sauce
1/2 teaspoon ground coriander
1/2 cup regular or roasted peanut oil
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Soak the bamboo or wooden skewers in water for 30 to 60 minutes.
  • With a sharp knife, cut each chicken breast lengthwise into 12 long, thin strips. Thread 1 strip onto each of the skewers, weaving the skewer back and forth along the length of each chicken strip. Arrange them on a large platter or baking tray.
  • To prepare the marinade, in a small bowl combine the curry powder, pepper, salt and cumin. Spoon the oil over the chicken strips, turning to coat them evenly, and then evenly sprinkle the dry ingredients over them on both sides. Cover the platter or tray with plastic wrap and marinate in the refrigerator for 1 hour or longer.
  • To prepare the mint-soy vinaigrette, in a food processor fitted with the steel blade or a blender, combine the egg yolks, vinegar, mint, soy sauce and coriander. With the motor running, slowly drizzle in the oil and continue processing until smooth. Transfer the dressing to a bowl, season to taste with salt and pepper, cover with plastic wrap and refrigerate until ready to serve.
  • Preheat a hinged indoor grill or panini maker, according to the manufacturer's instructions, or preheat a broiler, outdoor grill, or stovetop grill pan. Grill the skewers, in batches if necessary, until cooked through and nicely browned, about 2 minutes total on a hinged grill or panini maker or 2 minutes per side in the broiler, in a grill pan, or on an outdoor grill. If using an indoor grill, take care that the skewers don't prevent the grill or panini maker from closing properly.
  • Serve the skewers immediately, passing the vinaigrette for guests to drizzle over their own skewers or to use as a dip.

SOBA SALAD WITH SOY-WASABI VINAIGRETTE

Soba Salad With Soy-Wasabi Vinaigrette image

Another recipe from the Best of Cooking Light magazine. I love the ingredients in this dish and I especially love wasabi along with edamame. Can't wait to try this dish!!!

Provided by DailyInspiration

Categories     Lunch/Snacks

Time 35m

Yield 4 serving(s)

Number Of Ingredients 10

1 garlic clove
6 ounces japanese soba noodles, uncooked
1 cup frozen shelled edamame
4 ounces snow peas, trimmed and halved crosswise (about 1 1/2 cups)
4 ounces whole baby carrots, quartered lengthwise
3 tablespoons rice wine vinegar
3 tablespoons low sodium soy sauce
1 tablespoon sesame oil
1 tablespoon prepared wasabi paste
1/2 cup radish, thinly sliced

Steps:

  • Mince garlic; let stand 10 minutes. Cook the noodles according to package directions omitting salt and fat. Drain and rinse noodles under cold water; drain well.
  • Steam edamame, peas, and carrots for 4 minutes or until crisp-tender. Drain and plunge vegetables into ice water; drain.
  • Combine garlic, rice vinegar, soy sauce, oil and wasabi in a large bowl; stir with a whisk. Add noodles, vegetable mixture and radishes; toss gently to coat. Serve immeditely.

Tips:

  • Choose the right type of soy sauce: Use a high-quality soy sauce that has a rich, complex flavor. Look for a soy sauce that is made with whole soybeans and has been naturally brewed for at least six months.
  • Use fresh ingredients: The fresher the ingredients, the better the vinaigrette will taste. Use ripe tomatoes, crisp cucumbers, and fresh herbs.
  • Balance the flavors: The vinaigrette should be a balance of sweet, sour, and salty. Use a little bit of honey or sugar to sweeten the vinaigrette, and a little bit of vinegar or lemon juice to add sourness. Soy sauce will add saltiness.
  • Emulsify the vinaigrette: To make the vinaigrette smooth and creamy, whisk it vigorously or shake it in a jar until the oil and vinegar are well combined.
  • Let the vinaigrette rest: After you make the vinaigrette, let it rest for at least 30 minutes before using it. This will allow the flavors to meld together.

Conclusion:

Soy vinaigrette is a versatile and delicious dressing that can be used on a variety of salads, vegetables, and grilled meats. It is easy to make and can be tailored to your own taste preferences. Experiment with different types of soy sauce, vinegars, and herbs to create a vinaigrette that you love.
