I'm not really sure where I got this recipe. It's written in my handwriting on a 3x5 card that's stained with soy sauce. This makes a good marinade for beef or pork.

1/2 cup soy sauce
1/2 cup water
2 tablespoons oil
2 tablespoons lemon juice
1 tablespoon brown sugar, packed
1 garlic clove, minced
1/4 teaspoon red pepper

Steps:

  • Mix all ingredients well.
  • Pour over beef or pork and marinate 8 hours or overnight.
  • Grill or broil meat.
  • Leftover marinade should be discarded.

Honey and Soy Sauce Marinade image

This is a lovely marinade for barbecued or fried chicken. I usually use it for chicken breasts cut into not too thin stripes which I cook on a table barbecue. Most raclette gadgets in Switzerland also include a barbecue facility. In the winter I like to invite people for a raclette and table barbecue evening and the marinated chicken stripes are always part of it. Everybody loves them! I found this marinade in a chicken cooking book and there they recommend it in particular for chicken thighs meat (bones removed). I'm sure it will be nice with whatever part of chicken you fancy. Just remember that the bigger the parts you want to fry/barbecue, the longer the meat should be in the marinade. You may even want to marinate your meat overnigt.

60 ml soy sauce

2 tablespoons sake (rice wine)
1/2 teaspoon Chinese five spice powder
500 g chicken meat (1 lb)

Steps:

  • Mix all ingredients for marinade.
  • Pour marinade over chicken meat. Make sure every part of meat is covered.
  • Refrigerate for at least 2 hours or overnigt.
  • Try this: You may want to put marinade and meat into a plastic bag, tie the bag together and turn it from time to time while in the fridge.

1/2 cup soy sauce
2 tablespoons grated fresh ginger
3 tablespoons mirin
1 pound small squid (bodies and tentacles), cleaned

Steps:

  • Mix together the soy sauce, ginger, and mirin in a large bowl to make the marinade. Reserve 1/2 cup of the marinade and set aside. Lay the squid in the remaining liquid, gently turning 4 times to coat all over. Marinate the squid for 10 minutes at room temperature, turning once.
  • Preheat a grill to hot. Grill the squid for about 4 minutes (5 minutes if they're larger than 1 ounce apiece). Every 30 seconds flip the squid and brush on the reserved marinade. The squid will turn from translucent to white when they're ready, becoming tender and releasing a rich aroma. Be careful not to overcook; squid turns rubbery if grilled too long. Serve immediately.

1 lb steak (I use sirloin)
mushroom (2-4 Portobello caps or any mushroom you prefer)
1/2 sweet onion
2 tablespoons soy sauce (I use Pearl River Bridge Superior Light Soy Sauce)
2 tablespoons port wine
1 garlic clove (crushed)
1/2 tablespoon flour (to coat the mushrooms)
2 tablespoons olive oil

Steps:

  • Marinate the steak in the soy sauce, port wine, and garlic for at least one hour.
  • Coat the mushrooms with flour.
  • When ready to cook, pour olive oil into a pan and pan fry the steak, save remaining sauce from marinade. When steak is cooked to your preference, take it out of pan and place on plate. Pour the remaining marinade into the pan and cook the mushrooms and sliced onions for a couple of minutes. Pour the mushroom/onion/sauce mixture over the steaks, serve with rice/potatoes/veggies, or whatever you prefer.
