ROASTED CITRUS-SOY CHICKEN WINGS

Roasted Citrus-Soy Chicken Wings image

Another recipe I found on MyGourmetConnection.com that sounds so good. Here is what is stated about the recipe: " These oven-roasted wings get plenty of flavor from a marinade of orange juice, soy sauce, sriracha and garlic. Serve by themselves, or with a little bit of sweet Thai chili sauce for dipping." Update 10/13/2013: I have now made these deliciously different wings and loved them. I still made a batch of baked buffalo wings for DH but I just ate these wings. The only change I made was to decrease the oven temp to 425 degrees, as mine seemed to be getting very caramelized/charring at 450.

BUTTER-ROASTED CHICKEN WITH SOY-GARLIC GLAZE

Categories     Chicken

Yield 4 Servings

Number Of Ingredients 17

F&W's Kay Chun rubs an Asian-spiced butter under chicken skin before roasting to create an incredibly juicy and delicious bird.
5 whole cloves
5 whole star anise
4 tablespoons unsalted butter, at room temperature
Kosher salt
Pepper
1/2 cup low-sodium soy sauce
2 tablespoons distilled white vinegar
One 2-inch piece of ginger, thinly sliced
3 garlic cloves, crushed
1 1/2 tablespoons sugar
One 3 1/2- to 4-pound chicken
2 tablespoons canola oil
1 cup all-purpose flour
1/3 cup plus 1 tablespoon boiling water
Toasted sesame oil, for brushing
Sliced cucumbers, sliced scallions and hoisin sauce, for serving

Steps:

  • 1. Preheat the oven to 450°. Finely grind the cloves and 3 of the star anise pods in a spice grinder and transfer to a small bowl. Mix in the butter and season with salt and pepper. 2. In a small saucepan, combine the soy sauce, vinegar, ginger, garlic, sugar and the remaining 2 star anise pods. Cook over moderate heat, stirring occasionally, until the glaze thickens, about 10 minutes. 3. Place the chicken on a rack set over a baking sheet. Beginning at the top of the breast, gently separate the chicken skin from the breast and thighs. Season the chicken cavity with salt and pepper. Rub the spiced butter under the skin, spreading it over the breast and thighs. Rub the canola oil all over the outside of the chicken and season with salt and pepper. Roast the chicken for 50 to 60 minutes, until golden brown and an instant-read thermometer inserted into the thickest part of the thigh registers 165°. Brush the chicken all over with the soy glaze and let rest for 15 minutes. 4. Meanwhile, in a small bowl, using a wooden spoon, stir the flour and boiling water until a shaggy dough forms. Turn out the dough onto a lightly floured surface and knead until smooth, about 5 minutes. Cut into 8 even pieces and roll into balls; keep covered with a damp paper towel. Using a lightly floured rolling pin, roll each piece of dough into an 1/8-inch-thick round. 5. Heat a griddle and brush it with sesame oil. Cook the pancakes, turning once, until golden in spots and cooked through, about 2 minutes. Transfer the pancakes to a plate and cover to keep warm. 6. Carve the chicken and serve with the warm pancakes, sliced cucumbers, sliced scallions and hoisin sauce. MAKE AHEAD The pancakes can be refrigerated overnight and rewarmed before serving.

ROASTED CITRUS-SOY CHICKEN WINGS

Another recipe I found on MyGourmetConnection.com that sounds so good. Here is what is stated about the recipe: " These oven-roasted wings get plenty of flavor from a marinade of orange juice, soy sauce, sriracha and garlic."

Provided by Lynn Dine

Categories     Poultry Appetizers

Time 35m

Number Of Ingredients 7

2 lb chicken wings
1/2 c orange juice, fresh
3 Tbsp soy sauce
2 clove garlic, minced
2 tsp sriracha sauce
2 Tbsp rice wine vinegar
2 Tbsp sesame oil

Steps:

  • 1. Combine the orange juice, soy sauce, garlic, sriracha, rice wine vinegar and sesame oil in a small bowl. Place the chicken wings in a self-sealing freezer bag and add the marinade. Press out all the air, seal and refrigerate for 6 to 24 hours, turning once or twice to ensure even flavor.
  • 2. Preheat the oven to 450°F Line a rimmed baking sheet with aluminum foil and spray with nonstick spray. Arrange the chicken wings in a single layer, skin side down. Discard the remaining marinade.
  • 3. Roast the wings for 15 minutes, then turn skin side up. Baste with any juices that may have accumulated in the pan and roast for an additional 10 to 15 minutes, until the skin is golden and crisp and the chicken is cooked through.
  • 4. Serve with sweet chili sauce for dipping.

Tips:

  • Choose the right chicken: For the best results, use a whole chicken that is between 3 and 4 pounds. A larger chicken will take longer to cook and may not brown evenly.
  • Use a flavorful soy sauce: Not all soy sauces are created equal. Choose a soy sauce that is rich in flavor and has a deep color. A good option is a Japanese soy sauce, such as Kikkoman.
  • Don't be afraid to add some heat: If you like your chicken with a little kick, add some chili powder or cayenne pepper to the marinade. You can also add some grated ginger or garlic for extra flavor.
  • Let the chicken marinate for at least 30 minutes: The longer the chicken marinates, the more flavorful it will be. If you don't have time to marinate the chicken for long, at least let it marinate for 30 minutes.
  • Roast the chicken at a high temperature: Roasting the chicken at a high temperature will help it to brown evenly and develop a crispy skin. Aim for a temperature of 425 degrees Fahrenheit.
  • Baste the chicken with the marinade: While the chicken is roasting, baste it with the marinade every 15-20 minutes. This will help to keep the chicken moist and flavorful.
  • Let the chicken rest before carving: Once the chicken is cooked through, let it rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the chicken, making it more tender and juicy.

Conclusion:

Soy roasted chicken is a delicious and easy-to-make weeknight meal. With just a few simple ingredients, you can create a flavorful and juicy chicken that the whole family will love. So next time you're looking for a quick and easy dinner idea, give soy roasted chicken a try!
