½ cup soy glaze

¼ cup rice vinegar

1 tablespoon low-sodium soy sauce
1 tablespoon apple cider vinegar
40 pearl onions, peeled
4 scallions, cut into thin rounds
Zest and juice from 1 large lemon
Kosher salt
3 large red bell peppers, seeded, quartered and cut into bite-size pieces (about 20 pieces per pepper)
3 large zucchini, halved lengthwise and cut into 1/2-inch pieces (about 20 pieces per zucchini)
3 tablespoons extra-virgin olive oil
Sesame seeds, for garnish

1 boneless chicken thigh, with or without skin attached
1 boneless chicken breast, with or without skin attached
4 naganegi or scallion, or young, thin leeks, white parts only

  • Soak 12 bamboo skewers in water for at least 1 hour. Meanwhile, make the tare. In a broiler or on a grill, cook the chicken wings until they are charred over about half their surfaces.
