SWEET GARLIC SOY SAUCE

Sweet Garlic Soy Sauce image

In Philippine cuisine, dark, fairly harsh soy sauce is favored, but it's often combined with sugar to create a syrupy dressing for vegetables. The added garlic gives this sweet and salty sauce a pleasant kick. This recipe originally accompanied Lumpia Rolls .

Yield Makes 1/2 cup

Number Of Ingredients 3

1/2 cup dark soy sauce
2/3 cup palm or brown sugar
2 garlic cloves, minced

Steps:

  • 1. Place the soy sauce and sugar in a saucepan and cook over low heat until slightly caramelized and thickened, about 5 minutes.
  • 2. Remove from the heat and stir in the garlic. Cool and serve. This sauce will keep well, refrigerated, for a couple of days; bring to room temperature if you're using it as a dipping sauce. (If you're cooking with it, you can use it directly from the refrigerator, of course.)

PERFECT SOY-GRILLED STEAK

Perfect Soy-Grilled Steak image

You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

Time 30m

Yield 4 servings

Number Of Ingredients 7

1/4 cup soy sauce
1 teaspoon peeled and minced ginger
1/2 teaspoon peeled and minced garlic
1 tablespoon honey, molasses or hoisin sauce
Freshly ground black pepper to taste
Juice of 1/2 lime
1 16- to 24-ounce boneless steak (rib-eye, skirt or strip), or one 24- to 32-ounce bone-in steak (rib-eye or T-bone)

Steps:

  • Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
  • Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.

Tips:

  • Use a variety of soy sauces to create different flavor profiles. Light soy sauce is a good all-purpose choice, while dark soy sauce adds a richer, more complex flavor. You can also try using tamari, a gluten-free soy sauce, or coconut aminos, a soy sauce alternative made from coconut sap.
  • Add other seasonings to your marinade to taste. Garlic powder, onion powder, ginger powder, and sesame seeds are all popular choices. You can also get creative and experiment with other spices and herbs.
  • Let your meat or vegetables marinate for at least 30 minutes, but no longer than 24 hours. This will give the marinade time to penetrate the food and infuse it with flavor.
  • When cooking your marinated food, be sure to cook it over medium heat to prevent the marinade from burning.
  • Soy garlic marinade is versatile and can be used on a variety of meats and vegetables. Some popular choices include chicken, beef, pork, shrimp, and tofu. You can also use it on vegetables such as broccoli, asparagus, and carrots.

Conclusion:

Soy garlic marinade is a simple yet flavorful way to add some extra zest to your meals. With just a few ingredients, you can create a marinade that will tenderize and infuse your meat or vegetables with a delicious umami flavor. So next time you're looking for a quick and easy way to add some flavor to your food, give soy garlic marinade a try.
