SOFT AND CHEWY OATMEAL CHOCOLATE CHIP COOKIES
With oats, butter, and mostly all brown sugar, you are guaranteed a soft and chewy oatmeal cookie. Use this perfect oatmeal cookie as the base for other add-ins such as raisins, dried cranberries, and nuts. Cinnamon and a touch of molasses add that little something extra. These are the best oatmeal chocolate chip cookies!

Steps:
- Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
- In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
- Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and both types of chocolate chips. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
- Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
- Use a large cookie scoop to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
- Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more chocolate chips into the tops- this is only for looks!
- Cookies stay fresh covered at room temperature for up to 1 week.
SOY FLOUR OATMEAL CHOCOLATE CHIP COOKIES
I had gotten some Bob's Red Mill Soy Flour for my daughter and was experimenting with it having never used Soy flour before. The cookies turned out very well and my kids had them almost gone in a few minutes! Just a note that the cookie dough will have a terrible after taste (I love to eat the dough), but the cookies will taste great! The cinnamon is optional because we love cinnamon, but you can leave it out.

OUTRAGEOUS OATMEAL (FLOUR) CHOCOLATE CHIP COOKIES
In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

Tips:
- To achieve the best texture for your cookies, make sure to use a combination of soy flour and regular all-purpose flour. Soy flour adds a unique nutty flavor and helps keep the cookies moist, while all-purpose flour provides structure and helps the cookies hold their shape.
- Don't overmix the cookie dough. Overmixing can result in tough, dry cookies. Mix the dough just until the ingredients are well combined.
- Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much in the oven.
- Use a cookie scoop to ensure that your cookies are all the same size and shape. This will help them bake evenly.
- Bake the cookies in a preheated oven. This will help them rise evenly and prevent them from becoming too brown on the outside while remaining raw on the inside.
- Let the cookies cool completely on a wire rack before enjoying them. This will help them set and firm up.
Conclusion:
These soy flour oatmeal chocolate chip cookies are a delicious and healthy treat that are perfect for any occasion. They are made with a combination of soy flour and all-purpose flour, which gives them a unique nutty flavor and a moist, chewy texture. The addition of oatmeal and chocolate chips adds a delicious crunch and sweetness. These cookies are also relatively easy to make, and they can be enjoyed by people with gluten sensitivities or allergies.
