Yield 12 servings

Number Of Ingredients 22

5 lb bone-in short ribs, English cut, 4-5 inches (10-12 cm) long
kosher salt, to taste
black pepper, to taste
1 lb dried shiitake mushroom
boiling water
2 tablespoons canola oil
1 medium yellow onion, chopped
½ cup pear, Asian, grated
1 piece fresh ginger, 2-inch(5 cm), peeled and sliced
5 scallions, chopped (white parts only)
3 cloves garlic cloves, crushed
¼ cup rice wine
3 tablespoons sugar
½ cup light soy sauce
½ cup dark soy sauce
2 tablespoons gochujang, Korean
2 tablespoons mirin
2 tablespoons sesame oil
cooked white rice
kimchi
sliced scallion
toasted sesame seed

Steps:

  • Generously season the short ribs all over with salt and pepper. Let sit at room temperature while you prepare the rest of the ingredients.
  • Add the dried shiitake mushrooms to a large heatproof bowl and pour in enough boiling water to cover. Cover with plastic wrap and let soak for 1 hour.
  • Preheat the oven to 350˚F (180˚C).
  • Heat the canola oil in a large Dutch oven over medium-high heat until almost smoking. Working in 2 batches, sear the short ribs on all sides until deeply browned and crispy, about 10 minutes total. Remove the ribs from the pot and transfer to a plate.
  • To pan with excess oil and beef fat, add the onion, Asian pear, ginger, scallions, and garlic, then cook over medium heat, stirring occasionally, until softened and slightly browned, about 10 minutes.
  • Add the rice wine and stir to scrape up any browned bits from the bottom of the pot.
  • Add the drained shiitake mushrooms, 1 cup (240 ml) of the shiitake soaking liquid, the sugar, light and dark soy sauces, gochujang, mirin, and sesame oil. Stir and bring to a boil.
  • Nestle the short ribs back into the sauce, cover, and braise in the oven for 3 hours, or until the short ribs are tender enough to fall off the bone.
  • Serve the short ribs over rice with the braising liquid spooned on top. Top with kimchi, sliced scallions, and toasted sesame seeds.
  • Enjoy!

Cabernet-braised Short Ribs Recipe by Tasty image

Here's what you need: large beef short ribs, celery, medium carrots, medium leek, garlic, bay leaf, fresh thyme, whole black pepper, all-purpose flour, salt, pepper, cabernet sauvignon, olive oil, tomato paste, unsalted beef broth, mashed potato, italian parsley

Provided by Jody Duits

Categories     Dinner

Yield 6 servings

Number Of Ingredients 17

6 large beef short ribs, trimmed of excess fat
2 stalks celery, trimmed and cut into 1-inch (2 cm) pieces
2 medium carrots, peeled, trimmed, and cut into 1-inch (2 cm) pieces
1 medium leek, white and light-green parts only, split lengthwise, thoroughly rinsed, and coarsely chopped
6 cloves garlic, peeled
1 bay leaf
4 sprigs fresh thyme
whole black pepper, to taste
2 tablespoons all-purpose flour
salt, to taste
pepper, to taste
1 bottle cabernet sauvignon
2 tablespoons olive oil
2 tablespoons tomato paste
2 qt unsalted beef broth, or chicken broth
mashed potato
italian parsley, chopped

Steps:

  • In a large bowl, add the short ribs, all vegetables, herbs and black pepper to taste for the marinade. Add the wine to cover.
  • Marinate at least 6 hours in the fridge.
  • Remove the meat from the marinade and pat dry with a towel or paper towel.
  • Strain the veggies from the wine. Reserve both the wine and veggies for later.
  • Season the meat with a generous amount of salt and pepper. Coat each side with flour and set aside.
  • In a large ovenproof pot, heat the olive oil over medium-high heat on the stovetop.
  • Preheat the oven to 350F˚(180C˚).
  • When the oil begins smoking, carefully slip ribs into the pot and sear until well-browned, 4 to 5 minutes per side. Transfer ribs to plate.
  • In the same pot, sauté the veggies from the marinade until lightly caramelized and browned, 5 to 7 minutes.
  • Add the wine in the pot, stirring to deglaze. Add tomato paste and stir to dissolve. Bring the liquid to a boil so the alcohol from the wine evaporates.
  • Add beef broth and bring it back to a boil. Add the ribs back to your pot. Spoon the liquid over the ribs to coat them.
  • Cover the pot and transfer to the middle rack of your oven.
  • Bake until meat is tender enough to be pierced easily with fork, about 2½ hours, opening the oven every 30 minutes and carefully skimming the fat from surface.
  • Serve with mashed potatoes, or another side of your choice, and garnish with chopped parsley on top.
  • Enjoy!

ROY CHOI'S BRAISED SHORT-RIB STEW

Roy Choi's Braised Short-Rib Stew image

Here is an adaptation of the Korean braised-short-rib stew known as galbijjim, a staple of neighborhood potlucks and church suppers and, in the words of the Los Angeles chef Roy Choi, "that meal from home that every Korean kid says his or her mom does best." His recipe (well, my version of his recipe, which is his version of his mom's) is rich and deeply flavored, thickly sauced and pungent with sugar, spice, soy and garlic. It is the sort of meal you could put together on a weekend afternoon and serve for nights to come. It is the best sort of family food.

Time 3h30m

Yield 4 to 6 servings

Number Of Ingredients 15

4 pounds bone-in short ribs
1 small bunch scallions, trimmed and roughly chopped
1 1/2 cups soy sauce
1/4 cup chopped fresh ginger
1 small yellow onion, roughly chopped
1/2 cup garlic cloves, peeled (about 2 heads)
1/2 cup granulated sugar
1/2 cup mirin
1/2 cup fresh orange juice
1/2 cup apple juice
1/2 pound shiitake mushrooms, stems reserved for another use, halved or quartered if large
1 cup jarred, peeled chestnuts
1 cup taro, peeled and cut into large dice (about a 3-inch segment)
1 cup carrots, peeled and cut into large dice (about 2 carrots)
1 cup butternut squash, peeled and cubed (about half a squash)

Steps:

  • Put short ribs in a bowl, and cover with water. Drain, and discard water. Repeat twice. Remove short ribs from bowl, and score them diagonally across the top of the meat. Return ribs to the bowl, and rinse again. Remove, and pat dry.
  • In a blender or food processor, combine scallions, soy sauce, ginger, onion, garlic, sugar, mirin, orange juice and apple juice, then pulse to purée. Add a little water if you need to thin out the sauce so it combines.
  • Put puréed sauce in a heavy-bottomed pot or Dutch oven with a lid, add 3 cups water and stir to combine. Bring pot to a boil over high heat, then add the ribs to the pot and lower heat to a simmer. Cover pot.
  • Cook ribs over low for at least 2 hours. Add vegetables, cover and simmer, 30 minutes more or so, until meat is tender and vegetables are cooked through. Serve warm.

Soy Sauce-Marinated Short Ribs with Ginger image

A drizzle of Sriracha at the end balances out the glaze's sweetness and adds earthy complexity to this short ribs recipe.

Categories     Bon Appétit     Braise     Beef     Beef Rib     Soy Sauce     Garlic     Sesame Oil     Ginger     Anise     Dinner

Yield 4 servings

Number Of Ingredients 14

2 cups soy sauce
1 cup sugar
2 tablespoons toasted sesame oil
1 tablespoon crushed red pepper flakes
6 garlic cloves, chopped
1 (2-inch) piece ginger, peeled, chopped
8 star anise pods
4 (2-inch-thick) English-style bone-in beef short ribs (about 1 pound each)
1 tablespoon cornstarch
1 tablespoon fresh lime juice
2 cups cooked white rice (from 1 cup uncooked)
1 scallion, thinly sliced
1 teaspoon toasted sesame seeds
Lime wedges and Sriracha (for serving)

Steps:

  • Whisk soy sauce, sugar, oil, red pepper flakes, garlic, ginger, star anise, and 1 cup water in a large bowl until sugar is dissolved. Add short ribs and place a small plate on top of short ribs to keep submerged. Cover bowl and chill at least 8 hours and up to 1 day.
  • Preheat oven to 325°F. Transfer marinade and ribs to a large Dutch oven and bring to a simmer over medium heat. Cover and braise in oven, turning meat once, until ribs are very tender but not quite falling off the bone, 1 1/2-2 hours.
  • Transfer ribs to a medium bowl and cover with foil to keep warm. Strain braising liquid into a medium saucepan; discard solids. Let sit a minute or so to settle, then ladle off fat from surface; discard. Bring braising liquid to a boil and cook, whisking occasionally, until reduced by half, 10-15 minutes.
  • Whisk cornstarch and 3 Tbsp. water in a small bowl to make a slurry, then whisk into reduced braising liquid. Cook over medium, whisking constantly, until glaze is thick and bubbling, about 1 minute. Remove from heat and stir in lime juice.
  • Mound rice in center of shallow bowls and place ribs on top. Drizzle about 2 Tbsp. glaze over each (you'll have plenty left over; save it and serve with grilled steak or chicken). Top with scallion and sesame seeds. Serve with lime wedges and Sriracha.

1 teaspoon sea salt (or as needed)
1 teaspoon black pepper (or as needed)
2 tablespoons extra virgin olive oil
1 tablespoon clarified butter
2 1/2 cups red onions, sliced
2 1/2 cups shiitake mushrooms, sliced

3 1/2 beef broth, divided (or as needed)
1/2 cup cooking sherry

2 teaspoons cornstarch (mixed with 1/2 cup cold water)
1 tablespoon parsley, chopped (for garnish)

SOY-BRAISED SHORT RIBS WITH SHIITAKES

SOY-BRAISED SHORT RIBS WITH SHIITAKES image

Categories     Beef

Number Of Ingredients 13

3 tablespoons vegetable oil, divided
4 pounds cross-cut beef short ribs (flanken style), about 1 1/2-inch-thick, cut into 2-bone pieces
Kosher salt and freshly ground black pepper
3/4 pound shiitake mushrooms, stems chopped, caps sliced, divided
1 bunch scallions, whites chopped, greens thinly sliced, divided
1 1-inch piece peeled ginger, thinly sliced
2 cups (or more) low-sodium beef or chicken broth
1/2 cup reduced-sodium soy sauce
1/3 cup dry sake
1/4 cup (packed) dark brown sugar
3 whole star anise
1 cinnamon stick
8 ounces wide rice noodles, cooked according to package directions

Steps:

  • Place a rack in lower third of oven; preheat to 325°. Heat 1 tablespoon oil in a large heavy pot over medium-high heat. Season short ribs lightly with salt and pepper. Working in batches, cook short ribs, reducing heat as needed to avoid overbrowning, until brown on all sides, 10-12 minutes per batch. Transfer short ribs to a plate; drain all but 1 tablespoon drippings from pot. Add shiitake stems, scallion whites, and ginger to pot. (Cover and chill remaining mushrooms and scallions.) Cook, stirring often, until fragrant, about 2 minutes. Add 2 cups broth, soy sauce, sake, brown sugar, star anise, and cinnamon; bring to a simmer. Return short ribs to pot, nestling them bone side up in liquid in a single layer. Cover pot, transfer to oven, and braise until ribs are fork-tender, about 2 1/2 hours. Using tongs, transfer ribs to a shallow baking dish bone side down. Strain liquid from pot through a fine-mesh sieve into a large measuring cup; discard solids. Skim fat from cooking liquid. Add broth as needed so liquid measures 1 1/4 cups and pour over ribs. Let cool completely, then cover with foil and chill for at least 3 hours. DO AHEAD: Ribs can be cooked 2 days ahead. Keep chilled. Preheat oven to 350°. Bake short ribs, covered, until heated though, about 25 minutes. Remove 1/2 cup liquid from baking dish; set aside. Heat remaining 2 tablespoons oil in a large skillet over medium-high heat and cook shiitake caps until brown and tender, about 3 minutes. Add reserved braising liquid and all but 1 tablespoon scallion greens and season with salt. Place cooked noodles on a large, deep platter. Arrange short ribs on top of noodles; drizzle sauce from dish over. Spoon mushrooms with sauce over. Sprinkle with remaining scallion greens.

Tips:

  • Choose the right short ribs: Look for short ribs that are well-marbled with fat, as this will help them stay moist and flavorful during cooking.
  • Brown the short ribs before braising: Browning the short ribs adds a layer of flavor and helps to develop a rich, caramelized sauce.
  • Use a flavorful braising liquid: The braising liquid is key to developing the flavor of the short ribs. Use a combination of soy sauce, rice wine, and aromatics like ginger, garlic, and scallions.
  • Cook the short ribs until fall-off-the-bone tender: This will take at least 2 hours, but it's worth the wait. The longer the short ribs cook, the more tender and flavorful they will be.
  • Serve the short ribs with rice or noodles: Short ribs are traditionally served with rice or noodles, but you can also serve them with mashed potatoes or your favorite side dish.

Conclusion:

Soy-braised short ribs with shiitakes is a delicious and comforting dish that is perfect for a special occasion or a weeknight meal. The short ribs are fall-off-the-bone tender and packed with flavor, and the shiitakes add a umami richness to the dish. With a little planning and effort, you can create a memorable meal that your family and friends will love.
