CHICKEN SOUVLAKI SALAD

Chicken Souvlaki Salad image

This recipe was in the 'food' section of our local paper a couple of weeks ago. We made it while on a camping trip, a very refreshing and different salad! It has a definite Greek taste and is very low-cal! Time does not include marinating (if you chose to do so).

Time 40m

Yield 4 serving(s)

Number Of Ingredients 19

1 teaspoon minced garlic
1 teaspoon lemon juice
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb boneless chicken breast
1/2 cup plain fat-free yogurt
1/4 cup grated peeled cucumber
1 teaspoon white wine vinegar
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
3 cucumbers, peeled and cubed
1/2 red onion, sliced
1/2 cup crumbled feta cheese (I actually like more)
1/2 cup chopped kalamata olive (again-I like more!)
1 tomatoes, seeded and cubed

Steps:

  • Mix all of the marinade ingredients in a bag with the chicken.
  • Shake to coat.
  • Original recipe didn't call for any marinade time, but we marinated for a couple of hours.
  • Broil, grill, or pan fry chicken until done.
  • Set chicken aside to cool slightly.
  • Cut chicken into 1-inch pieces.
  • Combine all dressing ingredients together in a bowl.
  • Mix well.
  • Combine chicken with salad fixins; pour dressing over all and mix well.
  • Enjoy!

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your salad. Look for ripe vegetables, juicy chicken, and a flavorful dressing.
  • Don't overcook the chicken: Overcooked chicken is tough and dry. Cook it until it is just cooked through, or it will become tough.
  • Make the dressing ahead of time: This will allow the flavors to meld and develop. You can make the dressing up to 2 days in advance.
  • Use a variety of vegetables: This will add color, texture, and flavor to your salad. Some good choices include tomatoes, cucumbers, bell peppers, onions, and olives.
  • Don't be afraid to experiment: There are many different ways to make a souvlaki chicken pasta salad. Feel free to add or omit ingredients to suit your taste.

Conclusion:

Souvlaki chicken pasta salad is a delicious and easy-to-make dish that is perfect for a summer meal. It is packed with flavor and nutrients, and it is a great way to use up leftover chicken. Whether you are serving it at a potluck or enjoying it as a light lunch, this salad is sure to be a hit.
