EASY SOUTHWESTERN VEGGIE WRAPS

Easy Southwestern Veggie Wraps image

I developed this recipe when corn was in the farmer's market and big, red, juicy tomatoes were in my garden. To make this wrap light and healthy, I use fat-free sour cream, whole grain tortillas and brown rice. Although it's vegetarian by nature, change it up with a large chicken breast, diced small. -Cindy Beberman, Orland Park, Illinois

Tips:

  • Use firm or extra-firm tofu: This type of tofu holds its shape better when cooked and won't crumble in the wraps.
  • Press the tofu before cooking: This helps remove excess moisture and results in a crispier tofu.
  • Use a variety of vegetables: The more colorful the vegetables, the more appealing the wraps will be. Some good options include bell peppers, carrots, cabbage, and spinach.
  • Don't overcook the tofu: Tofu is a delicate protein that can easily become rubbery if overcooked. Cook it just until it is heated through.
  • Use a flavorful sauce: The sauce is what brings all the flavors together in the wrap. Use a store-bought sauce or make your own using ingredients like salsa, Greek yogurt, or tahini.
  • Wrap the wraps tightly: This will help keep the ingredients inside and make them easier to eat.
  • Serve the wraps immediately: Tofu wraps are best served fresh, so make them just before you're ready to eat them.

Conclusion:

Southwestern tofu wraps are a delicious and healthy meal that can be enjoyed for lunch, dinner, or a snack. They're packed with protein, vegetables, and flavor, and they're easy to make. With a little planning, you can even make them ahead of time and have them ready to go when you're short on time. So next time you're looking for a quick and easy meal, give southwestern tofu wraps a try.
