1 small head broccoli, cut into small florets
1 garlic clove, halved
2 teaspoons vegetable oil, such as safflower
Coarse salt and ground pepper
1 sirloin steak (about 5 ounces and 1/2 inch thick)
1/4 teaspoon ground cumin
1/4 cup store-bought salsa

Steps:

  • Preheat toaster oven (or oven) to 450 degrees. On toaster-oven pan (or a rimmed baking sheet), toss together broccoli, garlic, and 1 teaspoon oil; season with salt and pepper. Roast until tender and slightly charred, 10 to 12 minutes, tossing halfway through.

Time 15m

Yield 4 servings

Number Of Ingredients 11

Kosher salt
2 heads broccoli, cut into florets
5 tablespoons butter
2 green onions, sliced
3 tablespoons all-purpose flour
3 cups milk
2 cups grated pepper jack cheese
4 ounces cream cheese, softened
1 teaspoon chili powder
1/2 teaspoon ground cumin
Freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil and season with salt. Prepare a large bowl of ice water. Blanch the broccoli by throwing the florets into the boiling water for 30 seconds. With a slotted spoon, remove the florets to the ice water. When cool, drain and set aside. Keep cool in the fridge.
  • To make the sauce, melt the butter in a pot over medium heat. Add the green onions and cook for 2 minutes. Sprinkle in the flour, whisk to combine and cook until thickened, about 1 minute. Pour in the milk and heat until thickened, 4 to 5 minutes. Add the grated cheese, cream cheese, chili powder, cumin, 1/2 teaspoon salt and pepper to taste. Stir to melt. Taste and adjust the seasonings.
  • Serve hot as a dipping sauce with the cold broccoli.

Time 30m

Yield 2 servings

Number Of Ingredients 12

2 tablespoons reduced-sodium soy sauce
2 tablespoons oyster sauce
2 tablespoons canola oil
1 tablespoon toasted sesame oil
1 tablespoon light or dark brown sugar
1/2 teaspoon crushed red pepper flakes
2 cloves garlic, minced
3/4 pound sirloin steak, cut into bite-size pieces
10 ounces broccoli florets
2 scallions, light and dark green parts only, chopped
Cooked rice, for serving
Toasted sesame seeds, for garnish

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
  • Make the sauce: Whisk together the soy sauce, oyster sauce, canola oil, sesame oil, brown sugar, red pepper flakes and garlic in a large bowl until combined.
  • Prepare the beef and broccoli: Add the steak, broccoli and scallions to the sauce and toss until well coated. Arrange the ingredients on the prepared baking sheet in a single layer.
  • Bake on the upper oven rack until the steak is browned and the broccoli is al dente, about 15 minutes.
  • Serve with rice and garnish with toasted sesame seeds.

Tips:

  • For a more flavorful steak, marinate the sirloin in the Southwestern marinade for at least 30 minutes before cooking.
  • To ensure the steak is cooked to your desired doneness, use a meat thermometer to check the internal temperature.
  • For a crispy crust on the steak, sear it over high heat for a few minutes per side before reducing the heat to medium-low and cooking until done.
  • To prevent the broccoli from becoming soggy, roast it at a high temperature for a short amount of time.
  • For a more flavorful broccoli, toss it with olive oil, salt, and pepper before roasting.
  • Serve the steak and broccoli with your favorite sides, such as mashed potatoes, rice, or salad.

Conclusion:

This Southwestern sirloin with roasted broccoli is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The steak is flavorful and juicy, while the broccoli is crispy and tender. This dish is sure to please everyone at your table.
