1 (15 ounce) can black beans, drained and rinsed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

1/4 cup olive oil
2 teaspoons ground cumin
2 garlic cloves, minced
1 tablespoon salsa

1 package (16 ounces) uncooked spiral or cavatappi pasta
1-1/2 cups fresh or frozen whole kernel corn, thawed

1 small green pepper, finely chopped

1 lb chicken breast, cubed
2 tablespoons olive oil
1 1/2 teaspoons ground cumin (to taste)
1 1/2 teaspoons chili powder (to taste)
3/4 teaspoon salt
1 dash cayenne pepper
1 1/2 cups diced tomatoes
3/4 cup corn kernel, fresh or frozen
2 jalapeno peppers, seeded and finely chopped
1 1/2 cups reduced-sodium fat-free chicken broth
12 ounces fettuccine, cooked as package directs
6 ounces goat cheese, crumbled
1/3 cup cilantro, chopped

Steps:

  • Peel sweet onions and cut into slices about 1/4-inch thick; separate slices into rings.

1 red onion, finely sliced
6 tomatillos, quartered
1 cup fresh corn kernels

1 canned chipotle pepper
1/2 cup olive oil
Salt and freshly ground pepper
1/4 cup cilantro, finely chopped

  • Place cooked pasta in a large bowl, add peppers, onions, tomatillo, corn and lima beans. Place vinegar and chipotle peppers in a blender and blend until smooth. Slowly add olive oil until emulsified and season with salt and pepper to taste. Toss the salad with the dressing and add cilantro.

This goes over well at potlucks - when there's a choice of more than one pasta salad, this one usually goes first. Oddly enough, the leftovers make good soup, too! I just add the leftovers to some vegetable broth and canned tomatoes, and season it with more of the same spices that were in the recipe. This recipe originally came from allrecipes.com, but I have tweaked it in a way that suits me better. As always I have cut back on the oil and lime juice, so add more back in if it suits you. I love the amount of chili powder and cumin in this, but it may be a bit much for some so use less if you don't like those flavors as much as I do.

1/4 cup dry sherry
1 teaspoon olive oil
1 tablespoon fresh garlic, minced
1/4 cup shallot, minced
4 sun-dried tomatoes packed in oil, drained and coarsley chopped
2 tablespoons pickled jalapeno peppers, finely chopped
2 large tomatoes, seeded and coarsley chopped
1/2 lb fresh pasta
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • Heat the sherry and oil in a heavy skillet over med-high until it boils.
  • Saute the garlic and shallots for 3 minutes, stirring.
  • Add the both types of tomatoes and the jalapenos.
  • Reduce heat to low, and cook for 20 minutes. Stir occasionally.
  • While sauce simmers, prepare the pasta (fresh pasta should only need to boil for 5 minutes or less). Stir the fresh pasta occasionally, as it can get pretty sticky.
  • Drain the pasta, rinse briefly with hot water, and drain again.
  • Add the pasta to the skillet with the sauce, then sprinkle in the fresh herbs.
  • Toss pasta and sauce together, then serve immediately.

1/2 lb chorizo sausage, thinly sliced (fully-cooked)
1 large green pepper, diced
1 large onion, diced
1 small zucchini, diced (about 6 ounces)
2 (16 ounce) cans low-sodium stewed tomatoes
1 (16 ounce) can no-salt-added corn (drained)
1 (4 ounce) can mild green chilies (diced)
coarsely shredded monterey jack cheese (to garnish)

Steps:

  • Prepare macaroni as label directs but do not add salt to water; drain and keep warm.
  • Meanwhile, in 12-inch skillet over medium-high heat, cook sausage, green pepper, and onion, stirring frequently until vegetables are tender; discard any fat in skillet.
  • Stir in zucchini, stewed tomatoes, corn, and chilies with their liquid; heat to boiling. Reduce heat to low; cook 10 minutes to blend flavors.

1/4 cup light olive oil
1/2 cup fresh lime juice
1 1/2 teaspoons cayenne, to taste
2 teaspoons ground cumin
1/2 teaspoon salt
1 teaspoon dried cilantro
2 garlic cloves, crushed
1 tablespoon salsa, to taste
1 tablespoon white wine vinegar
1 1/2 cups whole kernel corn (can, Frozen or Fresh)
1 (15 ounce) can black beans, drained and rinsed
1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
1/2 cup fresh cilantro leaves, rough chopped
1 cup cherry tomatoes, halved
1 cup black olives, sliced
1/2 cup red onion
1 large avocado, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine oil, vinegar, lime juice, cayenne, cumin, salt, garlic, dried cilantro and salsa.
  • Stir in corn, beans, green pepper, red pepper, tomatoes, olives and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with avocado and remaining cilantro. Serve chilled.

Steps:

  • Heat oil in a large, deep skillet. Saute onion, green pepper, garlic, chili powder and cumin.
  • Stir in tomatoes, chickpeas and corn. Reduce heat to low and simmer 15 to 20 minutes, or until thickened and heated through.

1 pound penne rigate (ridged penne)
1 1/2 pounds ground beef
1 tablespoon ground cumin (1 palmful)
1 tablespoon roasted ground coriander (1 palmful)
2 tablespoons chili powder (2 palmfuls)
Coarse black pepper
1 large yellow onion, chopped
3-5 garlic cloves, chopped (we really like garlic so I put in more, the recipe calls for 3)
1 jalepeño
2 tablespoons butter
2 tablespoons all-purpose flour (2 palmfuls)
2 cups milk
3/4 pound cheddar cheese (about 2 1/2 cups)
1/4 cup fresh cilantro leaves (a generous handful), chopped
1/2 cup fresh flat-leaf parsley leaves (a few handfuls) chopped
1 14-ounce can diced fire-roasted tomatoes

Steps:

  • Preheat the broiler to high and position the rack 8 inches from the heat. Bring a large pot of water to a boil. Salt the boiling water and cook the pasta until slightly undercooked--a little chewy at the center. While the water is coming to a boil, preheat a large skillet over medium-high heat and brown the hamburger. When the hamburger is almost finished, but still a little pink, throw in the garlic, jalepeño, and onions and finish cooking until the burger is browned and the onion is translucent. Drain the grease from the skillet and mix in the cumin, coriander and chili powder. Take off the heat or turn heat down low. In a medium sauce pot (and you can do this while you're browning the hamburger), melt the butter and add the flour to it. Cook for 1 to 2 minutes over moderate heat and then whisk in the milk. When the milk comes to a bubble, stir in the cheese, cilantro and parsley with a wooden spoon. When the cheese has melted, stir in the tomatoes. Once the pasta is cooked, drain it and add it back into the large pot. Add the contents of the hamburger and all of the Cheddar sauce, and stir to combine. Transfer to a baking dish, sprinkle with a bit more cheese if you wish, and place under the broiler to lightly brown.

2 large ripe seeded and chopped tomatoes or ( 1 1/2 cups chopped canned plum tomatoes
1/2 lb. fresh or dry pasta
2 T chopped fresh basil
2 T chopped fresh parsley

  • In a heavy skillet over medium high heat, heat the sherrry and oil till bubbly; saute garlic and shallots about 3 min.;add sun dried tomatoes, jalapenos and regular tomatoes. Reduce heat to low, cook uncovered for 20 minutes stirring occasionaly. Add cooked pasta to skillet, add basil and parsley, toss to coat.
