2/3 cup panko breadcrumbs
1/2 cup milk
1/4 cup chopped fresh cilantro
1/4 cup ketchup
2 tablespoons barbecue sauce
2 tablespoons Dijon mustard
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
4 cloves garlic, minced
4 green onions, thinly sliced
2 large eggs
1 small Spanish onion, diced
1 small red bell pepper, diced
2 pounds ground beef

Steps:

  • Preheat the oven to 375 degrees F. Add the panko, milk, cilantro, ketchup, barbecue sauce, Dijon mustard, chili powder, cumin, cayenne, garlic, green onions, eggs, Spanish onion and red bell pepper to a large bowl and mix until thoroughly combined. Add the beef and mix until incorporated, being careful not to overwork. Put the meat mixture in a loaf pan set on a rimmed baking sheet and bake until it registers 165 degrees F on an instant-read thermometer, 60 to 75 minutes. Let stand 10 to 15 minutes before slicing. Serve with smashed red potatoes, green onions and sour cream.

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, carrots, green chilies, cilantro, ketchup, pickled jalapenos, Worcestershire sauce, eggs, bell pepper, garlic, onion, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands, mix together until combined well. Transfer the mixture to the loaf pan. Bake the meatloaf for 30 minutes.
  • Stir the barbecue sauce, honey, chipotle powder, and vinegar together in small bowl. Remove the meatloaf from the oven and brush the top and sides all over with the spicy barbecue glaze. 1 cup chopped onion (about 1 medium)
1/2 cup fat free egg substitute
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup ketchup
1/2 cup thick & chunky salsa

Steps:

  • Coat 3 1/2-quart slow cooker with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strip in bottom of cooker and extending ends over sides of cooker.
  • Combine beef and next 5 ingredients; shape mixture into a loaf the shape of the slow cooker container. Place loaf in slow cooker over foil strips. (Foil strips become "handles" to remove meat loaf from slow cooker.)Make a shallow indention on top of meat loaf. Combine ketchup and salsa (chili sauce); pour over meat loaf.
  • Cover and cook on low heat 8 hours or on high heat 3 1/2 to 4 hours. Use foil strips to lift meat loaf from cooker. Let meat loaf stand 10 minutes before serving.Yield: 8 servings/4 points.

4 medium cloves garlic, smashed and peeled
1 large jalapeno pepper, seeded and cut into quarters
1 medium onion, peeled and cut into 2-inch chunks
1 small red bell pepper, seeded, de-ribbed and cut into 2-inch chunks
2/3 cup fresh cilantro
1 1/3 pounds mild or unseasoned pork sausage, removed from casing
1/3 cup unseasoned dried bread crumbs
2 tablespoons chili powder
1 scant tablespoon cumin
1 scant tablespoon dried oregano

Steps:

  • Place a rack in the center of the oven and heat to 350 degrees.
  • Place the garlic and jalapeno in the bowl of a food processor. Pulse 10 times to coarsely chop. Add onion, and pulse 10 more times. Add the bell pepper and cilantro and pulse 10 more times. There should be about 3 cups vegetables chopped medium fine.
  • Combine all of the ingredients.
  • Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch in a 9-by-13-inch heatproof glass pan.
  • Bake for 30 minutes. (Meat temperature can be checked with a thermometer; it should be 145 degrees.) Remove from oven, and let rest 5 minutes. Using a pancake turner, remove each loaf and serve.

1/4 cup plain dried breadcrumbs
1 cup (about 1 bunch) scallions, minced
4 cloves garlic, minced
1/2 cup plus 3 tablespoons tomato-based chili sauce
1 large egg, lightly beaten
1 tablespoon chili powder
2 teaspoons ground cumin
Coarse salt and ground pepper
Warmed tortillas, for serving (optional)
Pickled jalapeno slices, for garnish (optional)

Steps:

  • In a large bowl, combine beef, breadcrumbs, scallions, garlic, 1/2 cup chili sauce, egg, chili powder, cumin, 1 teaspoon salt, and 1/2 teaspoon pepper. Using your hands, mix just until combined; do not overmix.
  • Divide beef into 4 equal portions. Form each portion into a 4-inch-diameter patty, about 1 1/2 inches thick. Place on a plate; cover tightly with plastic wrap. Refrigerate until ready to use, up to overnight.

1 lb extra-lean ground beef round
1/2 lb ground turkey
3/4 c salsa
3/4 c soft bread crumbs
1 c chopped onion
1/2 c whole kernel corn
2 large eggs, lightly beaten
2 clove garlic, minced
2 tsp chili powder
1 tsp ground cumin
1/4 tsp black pepper
1/8 tsp salt
1/4 c tomato sauce
1 Tbsp ketchup
1 tsp brown sugar

Steps:

  • 1. Preheat oven to 350°F. Lightly grease a loaf pan, or 3 or 4 mini loaf pans. You may pre-cook the chopped onions and corn kernels in the microwave for 1-2 minutes if you like; this is supposed to help the meatloaf retain its "slice-ability." I like the flavor of the precooked vegetables.
  • 2. In a large bowl, combine the beef, turkey, salsa, bread crumbs, onions, corn, eggs, garlic, chili powder, cumin, pepper, and salt. Mix well. Form into a loaf and place in the prepared loaf pan. May also be divided evenly into 3 or 4 mini loaf pans.
  • 3. In a small bowl, combine the tomato sauce, ketchup, and brown sugar. Spread over the top of the meat loaf. Cover with foil and bake for 1 hour, or until a meat thermometer reads at least 160°F. Uncover and bake for 5 minutes more, or until the top browns slightly. Let stand 10 minutes before slicing.
  • 4. If using mini loaf pans, they only take a total of 30 minutes.
  • 5. Recipe Notes To freeze, remove the cooled cooked loaf from the pan. Wrap with a double layer of freezer-quality foil. To use, thaw overnight in the refrigerator. Bake the foil-wrapped loaf at 350°F for 20 minutes, or until hot.

1 lb ground beef (l used 87% lean)
1/3 c water
1 large egg, beaten
4 Tbsp old el paso taco seasoning mix (25% less sodium)
1 Tbsp plain bread crumbs (or use ground flaxseed)
1/8 tsp cayenne pepper
ketchup, use desired amount to top meatloaf

Steps:

  • 1. Lightly grease the inside (bottom only) of one 8x8-inch Teflon coated baking pan. Set pan aside.
  • 2. Preheat oven to 375º F.
  • 3. In a bowl mix together thoroughly, the ground beef, water, egg, taco seasoning, bread crumbs or flaxseed, and the cayenne pepper.
  • 4. Add the meat mixture to the baking pan, and shape into a loaf (7-inches in length -by- 3-1/4 inches in width).
  • 5. Top meat meatloaf with ketchup, and bake in oven for 1 hour.
  • 6. After removing the pan from oven, let the meatloaf sit for 5 minutes, before slicing and serving.
  • 7. Note: When it comes to adding either the bread crumbs or flaxseed, be sure to just add the 1 tablespoon. Surprisingly, that's all the recipe needs to hold this meatloaf together.

2 Tbs. plus 1 tsp. canola or olive oil
1 medium yellow onion, chopped
1 cup small-diced red bell pepper
2 large cloves garlic, finely chopped
4 oz. medium-coarse white bread, such as Italian or French, cut into 2-inch pieces (about 2-1/2 cups)
1 cup whole milk
1 lb. ground pork
1 lb. ground bison
2 large eggs
4 Tbs. chopped fresh cilantro
1 Tbs. finely chopped jalapeño pepper (seeded if you like)
1 Tbs. mild chile powder, such as ancho
2 lightly packed tsp. finely grated lime zest
2 tsp. ground cumin
1 Tbs. Worcestershire sauce
Kosher Salt
Freshly ground black pepper
2 Tbs. ketchup mixed with 1 Tbs. pureed canned chipotle in adobo

Steps:

  • Heat 2 Tbs. of the oil in a 10- to 12-inch skillet over medium-low heat. Cook the onion, bell peppers, and garlic, stirring frequently, until softened and just beginning to brown, 6 to 8 minutes. Transfer to a large bowl and let cool until warm. In a shallow dish that holds it in a single layer, soak the bread in the milk, flipping once, until soggy but not falling apart, 5 to 10 minutes, depending on the coarseness and freshness of the bread. Lightly squeeze a handful of bread at a time to remove some of the milk (it should be wet but not drenched). Finely chop and add to the bowl with the onion mixture. Position a rack in the center of the oven and heat the oven to 375°F. Add the bison, pork and eggs to the onion mixture. Scatter the cilantro, jalapeño, chile powder, lime zest, and cumin over the meat, and then sprinkle with the Worcestershire, 2-1/4 tsp. salt, and 1/2 tsp. pepper. Use your hands to gently mix all the ingredients until just combined; try not to compact the mixture as you do this. Heat the remaining 1 tsp. of oil in a small skillet over medium-low heat. Form 1 Tbs. of the meatloaf mixture into a small patty. When the oil is hot, cook the patty on both sides until cooked through, about 5 minutes total. Transfer to a plate and let cool slightly. Taste and adjust the salt, pepper, and other seasonings as needed. Repeat until you're satisfied with the flavor. Line a 9x13-inch baking pan with parchment. Transfer the meatloaf mixture to the baking pan and form into a 10x4-inch rectangular block (it becomes loaf-shaped as it cooks). Spread the chipotle ketchup over the top and lightly down the sides of the meatloaf to glaze it. Bake until an instant-read thermometer registers 160°F in the center of the meatloaf, 40 to 55 minutes. Let the meatloaf rest for 10 minutes. Transfer to a cutting board or serving platter with a large spatula and cut into 3/4- to 1-inch-thick slices.

1 can(s) (4 ounces ) Green Chillies
1/2 c Salsa (I use Pace's Medium-chuncky style, it's a staple in my home)
1 Tbsp Cumin
1 Tbsp Garlic Powder
1/2 tsp Red Pepper
1 tsp Salt
1 tsp Chili powder
1 lb Lean Ground Turkey
1/2 lb Chorizo (casing removed)
1 ea Egg
1 c Blue Corn Tortilla chips (crushed) plus extra chips for topping
2 ea Cloves of garlic (mined)
1/2 Medium sized onion (diced fine)
1/2 Medium Red Pepper(seeded and membranes removed diced fine)
1/2 c Cilantro leaves (chopped)
1 c Shredded Mexican-blend Cheese ( Chedder will work fine)

Steps:

  • 1. Combine tomato paste,green chillies, salsa and 1/2 cup water in medium sauce pan. Add cumin,garlic powder,chili powder, red pepper and 1/2 tsp. salt and stir well. Simmer over low heat. Meanwhile, place meat, egg, remaining salt, crushed chips, garlic, onion, bell pepper, cilantro and 1/2 cup of the simmering sauce and mix well.
  • 2. Place mixture in bread-loaf pan. Using your fingers, make a trench lengthwise in the middle of the meat mixture, leaving an equal amount of meat around edges. Fill trench with cheese, then fold meat over to seal the cavity. Top with the remaining sauce, then a handful of crumbled corn chips .
  • 3. Bake at 350 degrees for (1)Hour. Turn out of pan onto plate, then flip over on another plate and allow to cool for a few minutes before slicing and serving.
  • 4. Note: Instead of the Turkey and the Chorizo meats, you can substiute 1 1/2 lbs of Ground beef or you can combine 1 lb. of ground beef and 1/2 lb of Breakfast pan sausage (Jimmy Dean or Owens is good).

1/2 c bread crumbs, plain
2 large eggs
1/2 c picante sauce
1/2 Tbsp green chiles, chopped
1 c monterey jack cheese, shredded
1/4 c black olives, pitted and sliced
1 c chili sauce

  • 1. I used 1 teaspoon of southwest seasoning as a substitution for the picante seasoning it tasted just fine.
  • 2. Preheat oven to 350 degrees.
  • 3. In a large bowl, combine the ground beef, onion, green pepper, garlic, salt, cayenne pepper, frozen corn, green onion, picante seasoning, bread crumbs, eggs, picante sauce, green chiles, cheese, olives and chili sauce.
  • 4. Mix well with your hands.
  • 5. Place into a greased 9x5 inch loaf pan and bake for about 1 to 1 1/2 hours, until meat is no longer pink and juices run clear.
