Yield 8 serving(s)

Number Of Ingredients 13

2 (15 ounce) cans black beans, rinsed and drained
3 cups cooked lentils
1 1/2 cups whole kernel corn, fresh or frozen
1 cup chopped red onion
1 cup chopped green pepper
1/4-1/2 cup minced fresh cilantro or 1/4-1/2 cup parsley
1 cup vegetable oil
1/2 cup cider vinegar
1 tablespoon Dijon mustard
1 1/2 teaspoons ground cumin
2 -3 cloves garlic, minced
salt (to taste)
pepper (to taste)

Steps:

  • In a mixing bowl, add the first 6 ingredients; stir to combine.
  • In a jar or other container with a tight-fitting lid, add the oil, vinegar, mustard, cumin, garlic, salt and pepper to taste; secure lid and shake well to mix.
  • Pour dressing over vegetables; toss to coat.
  • Cover and chill for 4 hours.
  • This is good served on a bed of mixed salad greens.

Tips:

  • For a smokier flavor, toast the cumin and coriander seeds in a dry skillet over medium heat for 1-2 minutes before grinding.
  • To save time, use pre-cooked lentils. You can find them in the canned goods section of most grocery stores.
  • If you don't have any fresh cilantro, you can use 1/4 teaspoon of dried cilantro instead.
  • This salad is best served fresh, but it will keep in the refrigerator for up to 3 days.
  • To make this salad a complete meal, add some grilled chicken or tofu.

This southwestern lentil salad is a delicious, nutritious, and easy-to-make dish that is perfect for lunch, dinner, or a potluck. It is packed with protein, fiber, and vitamins, and it is also a good source of iron and calcium. The zesty dressing adds a lot of flavor, and the salad is even better the next day.
