Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

1/2 cup chopped green pepper
3 tablespoons butter
2 cans (15-1/2 ounces each) golden hominy, rinsed and drained
2 to 3 teaspoons chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a saucepan, saute onion and green pepper in butter until tender. Add the remaining ingredients. Cook, uncovered, over medium-low heat for 5-10 minutes or until heated through, stirring occasionally.

I love hominy, but I rarely find recipes to use it. Recipe courtesy of Jim Fobel's Casseroles. He says to serve this with burgers, broiled salmon, or roasted/barbecued meat. Jim also says you can roast 8 ounces of poblano chilies for a fresher, bigger flavor (peel, seed, and chop. For more flavor serve sprinkled with chopped cilantro and sliced scallions. I enjoyed it with 8 ounces of chilies. Thank you Jim Fobel, you always have the best casserole recipes. YUMMY!

1 cup low-fat plain yogurt
1/2 cup sour cream
1/2 teaspoon hot pepper sauce
4 ounces mild green chilies, drained and chopped
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
32 ounces yellow hominy (or a combination) or 32 ounces white hominy, rinsed and drained (or a combination)
16 ounces pink beans, rinsed and drained (or substitute kidney beans, black beans, or pinto beans)
1/2 cup sharp cheddar cheese, grated
1/2 cup monterey jack cheese, grated
1/2 teaspoon sweet paprika
cilantro, chopped
scallion, sliced

Steps:

  • Preheat the oven, and prepare the casserole or gratin dish by oiling.
  • In a large bowl, stir together the yogurt, sour cream, and hot pepper sauce.
  • Add the chilies, flour, salt, oregano, cumin, and pepper.
  • Stir to combine.
  • Stir in the hominy and beans.
  • Toss together both cheeses and stir half of it into the mixture.
  • Turn into the prepared casserole and sprinkle with the remaining cheese and the paprika.
  • Bake for 35 or 40 minutes, or until lightly browned and bubbly around the edges.
