375 g spaghetti or 375 g fettuccine pasta
1 tablespoon butter
1 small onion, chopped
375 g boneless beef grilling steak, cut into thin strips
3 tablespoons all-purpose flour
1 tablespoon chili powder
1/2 teaspoon ground cumin
2 cups milk
1/2 cup salsa
2 tablespoons tomato paste
1 cup corn kernel, thawed if frozen
1/2 cup kidney beans or 1/2 cup black beans, canned, drained, rinsed
salt
1/2 cup Canadian cheddar cheese or 1/2 cup monterey jack cheese, shredded
light sour cream (optional)
fresh cilantro, chopped (optional)

Steps:

  • In a large pot of boiling, salted water, cook pasta according to package directions until tender, but firm. Drain.
  • Meanwhile, in a large nonstick skillet, melt butter over medum-high heat. Add onion and sauté for about 3 minutes or until starting to soften.
  • Add beef and sauté for 3 minutes or until starting to brown.
  • Whisk flour, chili powder and cumin into milk; pour into skillet and cook stirring for about 5 minutes or until bubbling and thickened.

1-3/4 cups crushed saltines (about 40 crackers)
2 cups cooked rice
3 pounds ground beef
1 large onion, chopped
1-1/2 cups tomato juice
3/4 cup water
3 tablespoons taco seasoning
Seasoned salt, salt and pepper to taste
1/2 cup butter, cubed
1/2 cup all-purpose flour
4 cups whole milk
1 pound process cheese (Velveeta), cubed
4 cups shredded lettuce
3 cups shredded sharp cheddar cheese
3 medium tomatoes, diced
1 jar (10 ounces) pimiento-stuffed olives
1 package (14-1/2 ounces) tortilla chips

Steps:

  • Divide crackers between 2 ungreased 13x9-in. baking dishes. Top each with rice. , In a large skillet, cook beef and onion until meat is no longer pink; drain. 4 medium flour tortillas, made into matchsticks to equal 4 cups (see recipe below)
8 cups white rice or 8 cups Spanish rice, cooked
3 cups enchilada sauce
1 (16 ounce) can pinto beans or 1 (16 ounce) can black beans
4 cups chopped cooked chicken or 4 cups ground beef
2 -3 cups grated cheddar cheese
6 cups finely chopped lettuce
6 cups finely chopped mixed vegetables (such as green onion, avocado, tomato, black olives and pepper)

Steps:

  • Place all the ingredients in separate bowls and serve buffet style.
  • Each person assembles their own "haystack" by starting with a layer of matchsticks, and then rice and sauce.
  • Top with remaining ingredients of choice.
